We're so lucky that one of our favourite superfoods, Kale, has a year-round growing season! Spring has finally arrived and a larger variety of foods is coming with it, but this dish - borrowed from Nourished.ca - is great for those rainy days we've been having.
Make Your Meal Even Healthier Tip:
Skip the meat and yogurt to make it vegan, and toss in more veggies if you're feeling it! As always making the dishes from scratch is the healthier way to go. Soak the chickpeas overnight and have them ready the next day. And pull some frozen stock out of the freezer that you made the last time you had leftover veggies!
