Tasty Thursday: Recipe - Beets, Tomato, Mozzarella Salad

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

End of the heirloom tomatoes and fresh beets (esp the colourful ones) season, but you can still find them at farmers markets and some specialty stores.

This is a great cold salad, that you can serve along side a meal, at a dinner party, next to a pizza, or just have for lunch!

 

Make Your Meal Even Healthier Tip:

Make sure to find nice, FRESH, mozzarella - it's usually in the deli section at the grocery store. Or seek out some vegan cheese - specifically some nut cheese, maybe a nice goat cheese crumble. Do what suits you best, but this recipe is chock full of goodness.
Oh! And if/when you can find golden beets, you can switch the whole thing up and use red tomatoes or heirlooms.

It's so cold. I stepped in a river during a downpour up to my ankles the other day. I needed tomato soup.

While bumming a Thanksgiving meal last week, I met Alex Clark, the Farm Leader at Field House Brewing, and it just so happened that she brought a tonne of produce from the farm. I went home with a whole bunch of tomatoes, and beets (HUGE beets, the size of my head). These tomatoes are pictured below!

Make Your Meal Even Healthier Tip:

Fresh. Local. Simple. This soup doesn't need too much to it. Blend it up, maybe add some nutritional yeast, and you're set.

Tasty Tuesday: Recipe - *Fresh Prep's: Naan Flatbread Pizza w/ Pesto Ricotta, Tomatoes, w/ Spinach Walnut Salad

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

We've partnered with Vancouver company Fresh Prep for last week and this one to bring you today's Tasty Tuesday recipe.

How does Fresh Prep work, you might ask? - You just create an account and tell them your taste (meat, veg, fish, gluten or dairy free etc) and delivery preferences when you sign up. Then every week, they deliver you prepped and portioned ingredients for however many meals you’d like along with easy to follow recipe cards for you to cook meals in under 30mins!

I lean towards fish and veggie dishes (if you couldn't already tell via the weekly recipes), so last week I chose a Miso Glazed Salmon dish, and this week I'm featuring a Naan Flatbread with Salad! Check out my photos of the process below and the recipe itself!

Tasty Tuesday: Recipe - Avocado Toasts, 3 Ways!


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I'm sure by now you've heard the (ridiculous) claim about millennials not being able to own homes because they're buying avocado toasts... Besides rolling my eyes at all the articles around this, it made me REALLY want to eat avocado toast. Just for fun I decided to make a few fancy versions that would be good for any meal, but especially breakfast. I ate most of these out on the patio in the sunshine, and it was great.

What's your favourite way to do avocado toast? Let us know in the comment section!

Make Your Meal Even Healthier Tip:

You can eliminate dairy from these (but I didn't smother them in it), swap egg salad for tofu scramble, or load up on even more veggies. The sky is the limit with avocado toast!

Oh, and go for multigrain or whole wheat bread for the base!

Tasty Tuesday: Recipe - Veggie Chili


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

How is it November? How is it so dark and cold? And to make matters worse, it's Daylight Savings on Sunday. While we get an extra hour of sleep, I'm not looking forward to the 4:30pm sunsets.
That's it...I need chili.

Make Your Meal Even Healthier Tip:

More beans! Different kinds! Use veggie ground if you want to mimic meat. Top it with avocado instead of sour cream. Throw some carrots and celery in there if you're feeling crazy. Load it up with the good stuff, it's hard to go wrong. If you're putting it on rice, make sure it's brown rice!

Tasty Tuesday: Recipe - Green Bean & Corn Salad (with Tomatoes)

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

This is almost one of those 'look around your kitchen and what vegetables do you have to work with' type dishes. Except I nabbed all of my ingredients from the farmers market for super cheap and obvious freshness. It's a light salad that you can eat on your own or use as a side dish.

Make Your Meal Even Healthier Tip:

You can see the full recipe on how to make corn on the bbq HERE, but if you made that last week, you might just have leftover corn in the freezer like I do. If you're going to go through the trouble of shucking & soaking the corn and cooking it, might as well do a ton at a time and put some in the freezer for the future. I'm excited to make corn chowder in the middle of the winter with corn I know was local and fresh!

Tasty Tuesday: Recipe - Grilled Margherita Pizza

I got a brand new bbq recently so I could spend even more quality time on my patio, and really wanted to try and make a pizza on it. I looked up a few different recipes and got some tips, but sorted most of it out on my own. The result? Excellent, easy and so fresh!

Make Your Meal Even Healthier Tip:

All of my toppings came from the farmers market, including these awesome heirloom tomatoes. They made the dish even more colourful and each tomato had it's own unique flavour. The mozzarella was a good mozza made from all Canadian milk (avoid anything that says "milk based products" in the ingredients). You can even make the dough at home like I did, and control exactly what goes into it (and use whole wheat flour or gluten free flour if you want)! And obviously sub in some vegan cheese to make it dairy-free (and vegan of course).
