Tasty Thursday: Recipe - Beets, Tomato, Mozzarella Salad

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

End of the heirloom tomatoes and fresh beets (esp the colourful ones) season, but you can still find them at farmers markets and some specialty stores.

This is a great cold salad, that you can serve along side a meal, at a dinner party, next to a pizza, or just have for lunch!

 

Make Your Meal Even Healthier Tip:

Make sure to find nice, FRESH, mozzarella - it's usually in the deli section at the grocery store. Or seek out some vegan cheese - specifically some nut cheese, maybe a nice goat cheese crumble. Do what suits you best, but this recipe is chock full of goodness.
Oh! And if/when you can find golden beets, you can switch the whole thing up and use red tomatoes or heirlooms.

Tasty Tuesday: Recipe - Halloumi Sliders

It's definitely BBQ season! This weather has been amazing. I wanted to see if I could get in on the grill action but without the meat, and wanted to try cooking with Halloumi at the same time.

 

These are very simple and quick, though you could make a jerk marinade and have it sit in that for some extra kick (or another kind of sauce)!

 

Make Your Meal Even Healthier Tip:

 

The burgers can be straight forward, or topped up with veggies of your choosing. You could also see if you can find yourself a vegan halloumi (maybe Blue Heron Cheese one weekend!) and sub it in!

Tasty Tuesday: Recipe - Vegan Tomato Soup

It's so cold. I stepped in a river during a downpour up to my ankles the other day. I needed tomato soup.

While bumming a Thanksgiving meal last week, I met Alex Clark, the Farm Leader at Field House Brewing, and it just so happened that she brought a tonne of produce from the farm. I went home with a whole bunch of tomatoes, and beets (HUGE beets, the size of my head). These tomatoes are pictured below!

Make Your Meal Even Healthier Tip:

Fresh. Local. Simple. This soup doesn't need too much to it. Blend it up, maybe add some nutritional yeast, and you're set.

This dish was a combination of a farmers market trip (2 actually) and a 'what's left in my fridge' situation. You can basically throw any summer vegetables in here and it will be delicious.

The zucchini noodles also help keep it light, and of course gluten free! If you want to keep it all veg, don't add the shrimp!

Tasty Tuesday: Recipe - Squid Ink Humboldt Squid Pasta


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I saw this pasta on sale at a grocery store recently and immediately knew i had to make a meal with it...I mean, look at it!

Don't be afraid, it was just like regular pasta taste-wise, and did a great job absorbing the flavours of the sauce. If you're not into tomatoes, I'd suggest sautéing some spinach and throwing it in instead.

Make Your Meal Even Healthier Tip:

Make sure that you're getting ocean wise squid! I got some BC Humboldt squid from the Fish Counter on main (in the frozen section), and if you can't find squid, white fish would also work (or some sustainably caught prawns).

I skipped the parmesan that I saw in most other recipes as the dish is full of so much flavour already!

Tasty Tuesday: Recipe - Pasta Fazool


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Here's the thing, I know it's called Pasta e fagioli, but I like saying Pasta Fazool so much more.

This dish is hearty, full of veggies and beans, and tiny tiny pasta pieces. The snow might be gone, but the weather is still chilly, and if you need a solid dinner after a hard days work and workout, then this is for you. It's SUPER easy, and very simple, and I had almost everything in my house already.

Make Your Meal Even Healthier Tip:

There are a ton of different variations on this recipe, but you can switch up a lot of stuff. Add in some sausage for some protein, change up the beans if you have something different on hand, add in carrots for some more veg. Sprinkle some nutritional yeast on top (instead of parmesan, which is the usual topping).

Did you cook a LOT of corn for other recipes and freeze a bunch like I did? Good call. Now take some of it out of the freezer, grab some of the late harvest tomatoes at the farmers market and make this super easy, delicious and healthy meal for yourself, or for a fancy dinner party! Works as an appy (depending on the tomato sizes) or a main dish.

Make Your Meal Even Healthier Tip:

You can put a variety of toppings on top of the tomatoes when they are ready to be served, I chose a nut-based goat cheese, which is a tasty vegan & dairy free option. Feel free to sprinkle with nuts, or a bit of nutritional yeast, just keep it healthy!

Tasty Tuesday: Recipe - Green Bean & Corn Salad (with Tomatoes)

This is almost one of those 'look around your kitchen and what vegetables do you have to work with' type dishes. Except I nabbed all of my ingredients from the farmers market for super cheap and obvious freshness. It's a light salad that you can eat on your own or use as a side dish.

You can see the full recipe on how to make corn on the bbq HERE, but if you made that last week, you might just have leftover corn in the freezer like I do. If you're going to go through the trouble of shucking & soaking the corn and cooking it, might as well do a ton at a time and put some in the freezer for the future. I'm excited to make corn chowder in the middle of the winter with corn I know was local and fresh!

Busy week, and sorry for the delay, but hello from Ontario! I'm here for the next two weeks, but am not going to neglect some healthy eating!

Summer is being wonky, weather wise, out here, but the produce is coming in still. So I thought this colourful salad was the way to go. There is a restaurant in Toronto that does this salad (and wonderful pizza) and I was craving it. Excellent if you're eating out on a deck, or at a bbq, or even for a quick lunch!

Tasty Tuesday: Recipe - Tomato, Basil & Mozzarella Skewers

How are you doing with the New Year New You challenge? Are you on track both exercise wise and clean and healthy eating wise?

I've been dipping into the Salad Library over the last two weeks and there are some delicious meals in there. I came across the Tomato Mozzarella Salad with Balsamic Reduction pick that Natalie Langston chose, and decided to modify it for today's recipe!

I'm at a lot of events that have pass hors d'oeuvres and whenever the skewers of tomato with basil and mozzarella come by I get excited. They're such a clean crisp and refreshing bite that I can feel good eating, and I figured they'd be perfect for house parties and get togethers. No mess, one bite/mouthful, and most importantly: TASTY!

And honestly like the salad recipe says, the balsamic reduction makes the whole thing 10x better, and is simple to do.


Make Your Meal Even Healthier Tip:

Make sure when you're getting the mozzarella for this dish that you look for the 100% Canadian Milk symbol on the package. I learned a while ago that if this symbol is missing it means that the cheese "can contain modified milk ingredients or milk ingredients imported from Europe, the United States and even as far away as New Zealand". Not only does buying cheese with the symbol guarantee that you'd getting a product from Canada exclusively, it also means you're supporting our farmers. It's great to know exactly what you're putting in your body!
