Tasty Tuesday: Recipe - Purple Cauliflower & Purple Potato Soup

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I'm not going to lie to you. I saw purple potatoes and a purple cauliflower and really wanted to make some sort of dish that was purple.

 

Most stores have purple potatoes in right now, and some of the bigger and specialty stores have purple cauliflowers, but you can find everything you need at the farmers markets, like I did!

 

Make Your Meal Even Healthier Tip:

 

This soup is pureed so you can add a lot into it if you desire. I made sure to use my homemade vegetable stock, so that I could keep the sodium down. The soup definitely requires a lot of salt, but knowing you're starting with none is key to keeping the intake down!

Tasty Tuesday: Recipe - Beet Pesto Pasta

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Remember sunshine? *sigh* Vancouver's been such a tease... I literally chose this recipe because I wanted some sort of bright colourful food after so many rainy days.

Beets are just the best. I'm sick right now and they have so many great things to help. They're immune-boosting - being high in vitamin C, fibre and potassium!, they're pretty much fat free, and seriously just looking at pink pasta makes me feel better.

You can play with the ingredients in the sauce depending on what you like, but here's the basics for a tasty meal.

 

Make Your Meal Even Healthier Tip:

 

I threw a bunch of extra good stuff in the sauce. If you're making a thicker pesto it's very easy to do. Nutritional yeast, hemp hearts...you can even mix in some collagen powder without messing with the taste!

Go for whole wheat or enriched pasta (or gluten free if you prefer), and I'd serve it with a nice green salad on the side.

Tasty Tuesday: Recipe - "Cheesy" Baked Fennel

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Side dishes. Things that you want to be tasty, don't take too much cooking time, and taste great. Helps if they're healthy too! This Baked Fennel dish is great and goes with poultry, fish, pork, you name it. It's also super delicious on it's own!

Make Your Meal Even Healthier Tip:
I found a few of these recipes on the internet that dealt with parmesan, and while I love me some cheese, I wanted to keep it light and healthy, so I used nutritional yeast instead! Nutritional yeast is veg/vegan (make sure you get the right brand!), and packed with...you guessed it...nutrition! Specifically: "B-vitamins, folic acid, selenium, zinc, and protein. It’s low in fat, is gluten-free and contains no added sugars or preservatives." [Source] - if you've never cooked with it before, this is an easy recipe to try it out with. The baked fennel tastes incredible on it's own, so this is a nice little addition with a lot of benefits!
