Tasty Tuesday: Recipe - Chickpea Salad - NYE Appies!

HAPPY HOLIDAYS!
It's Christmas today, and New Years Eve is coming up fast and I'm sure it feels even faster those those planning parties!

How about starting the new year off right with a healthy, SUPER easy, and delicious hors d'oeuvre that is bound to be a hit.
This chickpea salad (thanks to The Vegan Project for this recipe, from their cookbook: "Vegan Cooking At Home") can be serves on the side, or like above, made into easy to eat finger food.
The prep is quick and you can make it ahead of time, making party planning a breeze.

The Vegan Project says: "Chickpeas are high in fibre and also have a great amino acid profile. When eaten with rice, you have a complete protein. You don't need to eat the rice at the same time - on the same day is just fine." Awesome!

Tasty Tuesday: Recipe - Purple Cauliflower & Purple Potato Soup

I'm not going to lie to you. I saw purple potatoes and a purple cauliflower and really wanted to make some sort of dish that was purple.

 

Most stores have purple potatoes in right now, and some of the bigger and specialty stores have purple cauliflowers, but you can find everything you need at the farmers markets, like I did!

 

Make Your Meal Even Healthier Tip:

 

This soup is pureed so you can add a lot into it if you desire. I made sure to use my homemade vegetable stock, so that I could keep the sodium down. The soup definitely requires a lot of salt, but knowing you're starting with none is key to keeping the intake down!

Tasty Tuesday: Recipe - Turmeric Rice

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

This week I was looking for a good side dish that could go with a variety of dishes, but esp. BBQ! This turmeric rice has a great spice to it, looks super pretty (maybe next to fish or a veg kabob of some sort?) and you can use the leftovers for breakfast burritos (but that recipe is for another day. Here are the basics! 

 

Make Your Meal Even Healthier Tip:

 

Swap out the jasmine rice for a brown rice - this takes longer to cook, but it's better for you! You can also cook the rice in veg stock to give it more flavour!

Tasty Tuesday: Recipe - Brussels Sprout Flatbread

I had a hankering for flatbread and an excess of brussels sprouts the other day and remembered seeing this recipes i wanted to try. If you google "Brussels Sprouts Pizza" a lot of recipes come up, with the same basic ingredients, so I was on a mission to make this healthy and light!

Make Your Meal Even Healthier Tip:

My best tip is to make the dough from scratch. You make everything else from home, try a simple whole wheat quick dough. I have a trusty bread-maker so I threw the ingredients in there. Also, lay off the cheese. A simple sprinkle of parm, some nutritional yeast, or vegan cheese will do the trick to hold it all together, you don't need too much!

It's almost Labour Day and the weather is still pretty great. So if you're having a BBQ, here is a perfect, vegan potato salad that everyone should love!

Make Your Meal Even Healthier Tip:

If you need to go nut-free, there are tons of other vegan dressings out there on the internet. Small potatoes of different colours are now in season (purple, red AND white), so be sure to grab some from the farmers market this weekend! Also, throw as much veg as you want in this recipe. There are beautiful purple peppers out there now, which would be fun instead of the traditional red pepper (or both!).

Here's the first in a series of camping-friendly recipes I'm going to post this summer. This pasta salad is easy to prep at home and make on the site, and the dressing is simple and vegan too. You can also easily make this for a bbq or long weekend party!

Make Your Meal Even Healthier Tip:

Use the veggies you have on hand or that are in season at the moment, and make sure to use brown rice pasta! Go light on the dressing, as it's flavourful and a lot goes a long way.

Tasty Tuesday: Recipe - *Fresh Prep's: Naan Flatbread Pizza w/ Pesto Ricotta, Tomatoes, w/ Spinach Walnut Salad

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

We've partnered with Vancouver company Fresh Prep for last week and this one to bring you today's Tasty Tuesday recipe.

How does Fresh Prep work, you might ask? - You just create an account and tell them your taste (meat, veg, fish, gluten or dairy free etc) and delivery preferences when you sign up. Then every week, they deliver you prepped and portioned ingredients for however many meals you’d like along with easy to follow recipe cards for you to cook meals in under 30mins!

I lean towards fish and veggie dishes (if you couldn't already tell via the weekly recipes), so last week I chose a Miso Glazed Salmon dish, and this week I'm featuring a Naan Flatbread with Salad! Check out my photos of the process below and the recipe itself!

Tasty Tuesday: Recipe - Green Bean & Corn Salad (with Tomatoes)

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

This is almost one of those 'look around your kitchen and what vegetables do you have to work with' type dishes. Except I nabbed all of my ingredients from the farmers market for super cheap and obvious freshness. It's a light salad that you can eat on your own or use as a side dish.

You can see the full recipe on how to make corn on the bbq HERE, but if you made that last week, you might just have leftover corn in the freezer like I do. If you're going to go through the trouble of shucking & soaking the corn and cooking it, might as well do a ton at a time and put some in the freezer for the future. I'm excited to make corn chowder in the middle of the winter with corn I know was local and fresh!

Tasty Tuesday: Recipe - Corn & Pepper Pasta Salad


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I really wanted two things for this week's recipe. 1) A cold pasta salad that I could take to my softball game and B) Something with fresh corn in it! Another excuse to use my BBQ! I found this great recipe on Oh My Veggies, made a few adjustments, and boom!: A bright summer salad recipe that kept me fuelled on the go!

Make Your Meal Even Healthier Tip:

Go for brown rice pasta to make this dish it's healthiest. I picked up some organic noodles, that also happen to be gluten free. Peppers and corn are in season right now and you can find them easily at your local farmers market - click here to see the ones in Vancouver.
