Tasty Tuesday: Recipe - Fiddlehead Pesto Pasta

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I made it my mission to find some fiddleheads before they went out of season so that you too could make these recipes! They're both vegan, super tasty, and the pasta is excellent both hot and cold, so you should make a batch for dinner and leftovers for lunch!

 

I'm going to take you through how to make the pesto, and then a recipe for the pasta. 

 

NOTE: *** YOU MUST COOK THE FIDDLEHEADS BEFORE YOU EAT THEM! Do not eat them raw. ***

 

Make Your Meal Even Healthier Tip:

 

A lot of the recipes I looked at for inspiration had cheese in the ingredients, but nutritional yeast the the job well! If you want to make some vegan parm, this is a great recipe for that.

Also, for the pasta, go for enriched, or whole wheat to make it healthier!

Tasty Tuesday: Recipe - Lentil Bolognese

I was craving something hearty, and considered making a veggie chilli, but I thought a good vegan bolognese might do the trick. I thought I had whole wheat pasta in the house, but apparently I ate it all. Luckily I did have a zucchini in the crisper, so zoodles it was! You can make it with either!

 

Make Your Meal Even Healthier Tip:

 

Sauces like bolognese are a great way to sneak in healthy foods like nutritional yeast, or hemp hearts. You won't notice them in the sauce, but your body will take note!

Tasty Tuesday: Recipe - Beet Pesto Pasta

Remember sunshine? *sigh* Vancouver's been such a tease... I literally chose this recipe because I wanted some sort of bright colourful food after so many rainy days.

Beets are just the best. I'm sick right now and they have so many great things to help. They're immune-boosting - being high in vitamin C, fibre and potassium!, they're pretty much fat free, and seriously just looking at pink pasta makes me feel better.

You can play with the ingredients in the sauce depending on what you like, but here's the basics for a tasty meal.

 

Make Your Meal Even Healthier Tip:

 

I threw a bunch of extra good stuff in the sauce. If you're making a thicker pesto it's very easy to do. Nutritional yeast, hemp hearts...you can even mix in some collagen powder without messing with the taste!

Go for whole wheat or enriched pasta (or gluten free if you prefer), and I'd serve it with a nice green salad on the side.

Tasty Tuesday: Recipe - Pumpkin Orzo

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Have leftover pumpkin puree kicking around from Thanksgiving still? (You can also use squash if you have that instead!) This is an awesome way to use it up! (These Pumpkin Muffins & a Pumpkin Smoothie are also super tasty.) It basically tastes like a spicy and earthy mac'n'cheese type dish...and it's quick and hearty. Great for post-workout fuel!

Make Your Meal Even Healthier Tip:

Eliminate the cheese and use nutritional yeast to make this vegan, or go half and half to keep it lighter. The pumpkin/squash is creamy already, so it doesn't need too much of a kick!

This dish was a combination of a farmers market trip (2 actually) and a 'what's left in my fridge' situation. You can basically throw any summer vegetables in here and it will be delicious.

The zucchini noodles also help keep it light, and of course gluten free! If you want to keep it all veg, don't add the shrimp!

Here's the first in a series of camping-friendly recipes I'm going to post this summer. This pasta salad is easy to prep at home and make on the site, and the dressing is simple and vegan too. You can also easily make this for a bbq or long weekend party!

Use the veggies you have on hand or that are in season at the moment, and make sure to use brown rice pasta! Go light on the dressing, as it's flavourful and a lot goes a long way.

Tasty Tuesday: Recipe - Squid Ink Humboldt Squid Pasta

I saw this pasta on sale at a grocery store recently and immediately knew i had to make a meal with it...I mean, look at it!

Don't be afraid, it was just like regular pasta taste-wise, and did a great job absorbing the flavours of the sauce. If you're not into tomatoes, I'd suggest sautéing some spinach and throwing it in instead.

Make Your Meal Even Healthier Tip:

Make sure that you're getting ocean wise squid! I got some BC Humboldt squid from the Fish Counter on main (in the frozen section), and if you can't find squid, white fish would also work (or some sustainably caught prawns).

I skipped the parmesan that I saw in most other recipes as the dish is full of so much flavour already!

Tasty Tuesday: Recipe - Pasta Fazool


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Here's the thing, I know it's called Pasta e fagioli, but I like saying Pasta Fazool so much more.

This dish is hearty, full of veggies and beans, and tiny tiny pasta pieces. The snow might be gone, but the weather is still chilly, and if you need a solid dinner after a hard days work and workout, then this is for you. It's SUPER easy, and very simple, and I had almost everything in my house already.

Make Your Meal Even Healthier Tip:

There are a ton of different variations on this recipe, but you can switch up a lot of stuff. Add in some sausage for some protein, change up the beans if you have something different on hand, add in carrots for some more veg. Sprinkle some nutritional yeast on top (instead of parmesan, which is the usual topping).

Tasty Tuesday: Recipe - Roasted Broccoli Pasta

I really really really just wanted some roasted broccoli this week, I could have eaten it on it's own as a snack, but I decided to wait for dinner and try and make it into a meal...

Was feeling like pasta and I had some leftover brown rice spaghetti on hand so I trolled around the internet for inspiration and after also realizing I had a red pepper in my fridge decided to throw that into the mix too. You can basically make this with any veggies you have lying around, cauliflower, zucchini, you name it.

Wilting some spinach into the pasta is a super easy way to get more greens into the dish, you almost don't even need the pasta (you can take it out and have an awesome roast veggie salad or appy dish! The sauce will change slightly but that's okay!

Tasty Tuesday: Recipe - Corn & Pepper Pasta Salad

I really wanted two things for this week's recipe. 1) A cold pasta salad that I could take to my softball game and B) Something with fresh corn in it! Another excuse to use my BBQ! I found this great recipe on Oh My Veggies, made a few adjustments, and boom!: A bright summer salad recipe that kept me fuelled on the go!

Go for brown rice pasta to make this dish it's healthiest. I picked up some organic noodles, that also happen to be gluten free. Peppers and corn are in season right now and you can find them easily at your local farmers market - click here to see the ones in Vancouver.
