Tasty Tuesday: Recipe - Miso Ramen



It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Soup season is upon us. I just want to hunker down with a bowl of noodles all the time now, and with this (vegan) miso ramen I can make a lot of the broth, and freeze it, so that when I want some, I don't have to start from scratch every time! This is way better than the instant-packaged stuff you'll find at the store, trust me.

 

Also, see if you can make this without humming the Chixdiggit song "Miso Ramen".

 

Make Your Meal Even Healthier Tip:


Throw as many kinds of greens as you'd like in here! Don't have baby bok choy? Try kale or spinach! Have some cabbage on hand? Toss that in too! Even if you don't have tofu handy, you can load up on the mushrooms and other veg.

I saw a recipe last summer that used black rice (or "forbidden rice") and forgot about it until I spotted some at a grocery store recently. I thought it would make for a nice looking food photo, and was happy to find out the dish was also delicious.

Serve it at a BBQ or as a side with fish, or have it for lunch on it's own like I did.

Lots of mushrooms are in season right now, so head to the local farmers market and grab whatever catches your eye!

Tasty Tuesday: Recipe - Vegan Ginger Noodle Bowl

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

This is quick, incredibly easy, and super tasty. It's great for tossing vegetables from the crisper in that are on their way out. You don't have to follow the list exactly (ex. sub in carrots if you don't have cabbage), and if you're out of tofu, you don't need it.

Make sure you're using a low-sodium soy sauce, or Bragg's...the ginger and other spices in the soup will make sure there is flavour without the salt!

Tasty Tuesday: Recipe - Avocado Toasts, 3 Ways!

I'm sure by now you've heard the (ridiculous) claim about millennials not being able to own homes because they're buying avocado toasts... Besides rolling my eyes at all the articles around this, it made me REALLY want to eat avocado toast. Just for fun I decided to make a few fancy versions that would be good for any meal, but especially breakfast. I ate most of these out on the patio in the sunshine, and it was great.

Make Your Meal Even Healthier Tip:

You can eliminate dairy from these (but I didn't smother them in it), swap egg salad for tofu scramble, or load up on even more veggies. The sky is the limit with avocado toast!

Oh, and go for multigrain or whole wheat bread for the base!

Tasty Tuesday: Recipe - Turkey, Mushroom, Veggie Vermicelli Bowl

My mom sent me a very similar dish to this, but with a few different ingredients and it looked so good I had to make/modify it - you can use pork if you prefer or a veggie ground. It's a very simple recipe that is great for a weeknight dinner, or a lunch after a class at Barre!

Make Your Meal Even Healthier Tip:

Make sure you use a sodium reduced soy sauce (I prefer Bragg's Liquid Aminos) because the dish is really flavourful and hearty and doesn't need extra salt. Also, I spotted some brown rice vermicelli at a store the other day, so give that a whirl and sub it in!

Tasty Tuesday: Recipe - Chanterelle Mushrooms with "Green" Risotto

I love that every time I go to the farmers market there are different mushrooms coming into season. There's a great booth that sells wild, foraged, mushrooms that I adore, and everything I've ever bought from them has tasted just exceptional. These chanterelles were no different, gorgeous colour and varying sizes. I wanted lots of little ones so they could be bite-sized in this dish, but you can chop down bigger ones if you desire. The green tint in the risotto is from fresh greens like parsley, spinach, and tarragon!

Make Your Meal Even Healthier Tip:

The original recipe that I based this one on called for canola or veg oil for the mushroom sautéing, but I used pure olive oil instead. And of course, I used my frozen, homemade vegetable stock for this. Any bits you have leftover from the mushrooms can go into the freezer for future 'mushroom stock' fixin's!

Tasty Tuesday: Recipe - Pea Shoots, Mushroom & Tofu Stir Fry


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

The markets are back!

This week we're saying goodbye to the winter markets and hello to the spring/summer markets and all of the wonderful produce and foods that come along with it.

Speaking of which I had some locally grown pea shoots (a LOT of them actually) and wasn't sure what to do with them. Eventually I landed on "stir fry" and got to work making something that was quick, easy and tasty. And of course local.


Make Your Meal Even Healthier Tip:

Pea shoots are great, but if you can't find them, sunflower shoots will do in a pinch, and/or micro greens. You can sub in different kinds of mushrooms to this dish, and if you're not in the mood for tofu, add even more vegetables!

Today's recipe, Coho Salmon with Mushrooms & Red Peppers, we nabbed from one of our favourites, Alyssa Bauman of Nourished.ca!
 

Make Your Meal Even Healthier Tip: 
Coho salmon is at the tail end of it's season, and it's sustainable, so I went with that particular type, and it's also low in fat and high in omega-3's! With mushrooms and a red pepper sauce, what more could you ask for?
