Tasty Tuesday: Recipe - Sardines on Avocado Multigrain Toasts

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!


I know what you're thinking...'anchovies?!', but hear me out! This is a delicious meal that can be used as either a lunch, appy, or even breakfast, and it's super healthy. The marinade is homemade and you can either use the sardines whole, or break them up like I did. (It kind of resembles tuna!)

 

Make it Even Healthier Tip: 
Sardines are still a sustainable source of seafood (yay!), and healthy too. Feel free to substitute the bread for a gluten-free version. Note: You can get sardines in water, instead of oil, like I did, but either way, be sure to get the ones that aren't already seasoned.

Tasty Tuesday: Recipe - Chilled Beet Salad

The warmer it gets the colder I like my salads, and sometimes lettuce doesn't cut it.

This beet salad is refreshing, easy to make and super colourful! Make a large version of this by doubling or tripling the recipe and it'd be great for a bbq side salad!

 

Make Your Meal Even Healthier Tip:

 

Swap the goat cheese for vegan goat cheese or just skip in general, the flavours in the salad alone are amazing.

Tasty Tuesday: Recipe - Fiddlehead Pesto Pasta

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I made it my mission to find some fiddleheads before they went out of season so that you too could make these recipes! They're both vegan, super tasty, and the pasta is excellent both hot and cold, so you should make a batch for dinner and leftovers for lunch!

 

I'm going to take you through how to make the pesto, and then a recipe for the pasta. 

 

NOTE: *** YOU MUST COOK THE FIDDLEHEADS BEFORE YOU EAT THEM! Do not eat them raw. ***

 

Make Your Meal Even Healthier Tip:

 

A lot of the recipes I looked at for inspiration had cheese in the ingredients, but nutritional yeast the the job well! If you want to make some vegan parm, this is a great recipe for that.

Also, for the pasta, go for enriched, or whole wheat to make it healthier!

Tasty Tuesday: Recipe - Beets & Burrata Salad

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Beets are still in season and can be found all over the place in grocery stores (including golden and other varieties). I really appreciate a good roasted beet that has been cooled overnight and put in a crisp salad, so I thought I'd pair it with a soft cheese.

 

You can make whatever kind of dressing you desire to go with this as you're starting with flavourful but simple ingredients (beets, burrata, field greens). Making your own from scratch is the way to go so you don't end up with unwanted sugar or other ingredients.

You can make this vegan by grabbing yourself some nut-based cheese. Blue Heron Creamery makes a coconut burrata that they sometimes have in their new storefront, just double check before waiting in line. A soft mozzarella will also work as a substitute (including a nut-based version).

Tasty Tuesday: Recipe - Pumpkin Orzo

Have leftover pumpkin puree kicking around from Thanksgiving still? (You can also use squash if you have that instead!) This is an awesome way to use it up! (These Pumpkin Muffins & a Pumpkin Smoothie are also super tasty.) It basically tastes like a spicy and earthy mac'n'cheese type dish...and it's quick and hearty. Great for post-workout fuel!

Make Your Meal Even Healthier Tip:

Eliminate the cheese and use nutritional yeast to make this vegan, or go half and half to keep it lighter. The pumpkin/squash is creamy already, so it doesn't need too much of a kick!

Tasty Tuesday: Recipe - Pea & Mint Soup

Peas are in season (in my own garden too! If you have some space they're really easy to grow) and mint grows like a weed (literally), so I thought it was appropriate to make a chilled Pea and Mint Soup. This is great as a first course, lunch, or you can get fancy and put it in shot glasses at a party like gazpacho!

Make Your Meal Even Healthier Tip:

This soup is very straight forward and all veggies, but try and use your own, homemade soup stock to reduce the added salt, and pick as much up from the farmer's markets as possible!

Tasty Tuesday: Recipe - Turkey, Mushroom, Veggie Vermicelli Bowl

My mom sent me a very similar dish to this, but with a few different ingredients and it looked so good I had to make/modify it - you can use pork if you prefer or a veggie ground. It's a very simple recipe that is great for a weeknight dinner, or a lunch after a class at Barre!

Make Your Meal Even Healthier Tip:

Make sure you use a sodium reduced soy sauce (I prefer Bragg's Liquid Aminos) because the dish is really flavourful and hearty and doesn't need extra salt. Also, I spotted some brown rice vermicelli at a store the other day, so give that a whirl and sub it in!

Remember those couple days of sunshine that sort of proved that Spring really was here, but now we're back to grey and rain and all you want to do is eat pizza?

Instead, make this super easy and really delicious stew that you can have for lunch or dinner (or freeze the second half!). You can use whatever mushrooms you have on hand or can find, lentils are really quick to make and kale is in season all the time!

If you're having it with the toasts, get some multi-grain bread or whole wheat!

You can make this gluten free by using chickpea flower for the falafel mixture. But other than that, the recipe is totally vegan! It makes enough for 2 people so you should share, or save some for the next day. That way you can load up the rest of your plate with more good stuff...avocado, olives, some whole wheat pita for dipping in that hummus...

Tasty Tuesday: Recipe - Tomato & Cashew Soup w/ Vegan Grilled Cheese

UGH, Winter is coming! And so is cold and flu season, which has already arrived for me. All I wanted was warm comfort food. A pureed soup that I could eat, and maybe a grilled cheese to dunk into it.

So I set about making the healthiest version of the Tomato Soup & Grilled Cheese that I possibly could, and boy did it turn out delicious. And dairy-free. And vegan. I recommend making a big batch of the soup and freezing some for the next time you're feeling down and out, or cold and lazy. Or, share some with your friends and neighbours. I did both!

Make Your Meal Even Healthier Tip:

The soup is about as healthy as you can get, the sandwich is what needs your attention. Be sure to pick a good healthy bread...a vegan whole wheat, or multi-grain, but get a good loaf that you can get some thick slices out of! You can add more greens to the sandwich too with spinach or kale. I just loaded it up with avocado.
