I went looking for a salad to put some fresh scallops in, and found this really interesting one (click for source) that had both grapefruit and fennel (also grown this time of year) in it, and it ended up being pretty darn good. Hit of citrus, warmth from the scallops, and a taste of fennel in every other bite. Definitely unique!
Make Your Meal Even Healthier Tip:
There are lots of varieties of shellfish (esp in BC) that never go out of season as they can be grown all year, including scallops! It's nice to have a sustainable (make sure to get Ocean Wise/certified fish!) protein, grown close to home, that just happens to also be very tasty.
