Tasty Tuesday: Recipe - Roasted Butternut Squash Soup

Happy (almost) Halloween!

It's squash and gourd season and this week we're also going to put your homemade soup stock to good use in a delicious Roasted Butternut Squash Soup - a recipe we love from Nourished.ca.


As Alyssa points out on her blog, gourds have tons of antioxidants, beta carotene, and are high in fibre and potassium. Not to mention tasty.

 

Make Your Meal Even Healthier Tip:

 

Since this recipe is dairy AND gluten free, and is vegan to boot, there's not much more you can do to make this soup any better. Except maybe do yourself a favour and make a double batch, and freeze some for one of the grey winter days we know are coming.

Tasty Tuesday: Recipe - Cold Lemongrass Noodle Salad

I accidentally got pad thai noodles when I was trying to buy rice noodles, so I decided to make something with them, and oh boy, was it a tasty success!

I'm a wuss when it comes to spice, so you'll have to adjust if you want more or less heat in this, but there are so many flavours in this Thai-inspired dish, you might not even want it!

 

Make Your Meal Even Healthier Tip:

 

This is vegan and is filled with great veggies, but feel free to add more - Or maybe something sweet? Play around with it, and make sure you have leftovers as this dish was even better after sitting overnight!

Tasty Tuesday: Recipe - Miso Ramen



It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Soup season is upon us. I just want to hunker down with a bowl of noodles all the time now, and with this (vegan) miso ramen I can make a lot of the broth, and freeze it, so that when I want some, I don't have to start from scratch every time! This is way better than the instant-packaged stuff you'll find at the store, trust me.

 

Also, see if you can make this without humming the Chixdiggit song "Miso Ramen".

 

Make Your Meal Even Healthier Tip:


Throw as many kinds of greens as you'd like in here! Don't have baby bok choy? Try kale or spinach! Have some cabbage on hand? Toss that in too! Even if you don't have tofu handy, you can load up on the mushrooms and other veg.

Tasty Tuesday: Recipe - Brown Rice Fried Rice

I've been watching Ugly Delicious on Netflix and there's a episode titled Fried Rice. It delves into Chinese Food and a lot of other wonderful things, but it still left me really wanting to make homemade fried rice.

I don't think I knew about the trick of using day old rice, as it helps to have less moisture when frying it up! To make it healthier, I used brown rice (which is even trickier, as the instructions on the package don't always work out for water absorption). Lean towards using less water so the rice won't be as wet!

 

Make Your Meal Even Healthier Tip:

 

You have so many options when it comes to what to put in fried rice...it could be simple, or it could be loaded up! Make it vegan by either substituting the fried egg for a tofu scramble, OR simply brown some tofu and add it in. The veg is up to you as well, I love the crunch of peas in my rice...toss in some carrots, or maybe broccoli and cabbage (great way to use leftovers/what is in your veggie crisper!). Whatever you decide, load it up with goodness!

Tasty Tuesday: Recipe - Vegan Ginger Noodle Bowl

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

This is quick, incredibly easy, and super tasty. It's great for tossing vegetables from the crisper in that are on their way out. You don't have to follow the list exactly (ex. sub in carrots if you don't have cabbage), and if you're out of tofu, you don't need it.

 

Make Your Meal Even Healthier Tip:

 

Make sure you're using a low-sodium soy sauce, or Bragg's...the ginger and other spices in the soup will make sure there is flavour without the salt!

Tasty Tuesday: Recipe - Farro "Super Bowl"

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Clearly there's a double meaning this week with the recipe for the game on Sunday, but this bowl can be consumed any day of the week. It's also great cold/as leftovers, so you can make a batch and take some on the go the next day. Farro is great, but if you don't have it on hand, try brown rice. The texture of the farro (when cooked well) is perfect for a fried rice bowl. And if you're looking to spice it up, add your favourite hot sauce!

 

Make Your Meal Even Healthier Tip:

 

Most fried rice will suggest adding a fried egg to it, but you can skip it to make it vegan/or if you're not into eggs. If you want to make it more of a dinner meal, rather than a lunch to go, you can think about adding something like tofu, and if you don't have leeks or brussels sprouts on hand (though both are currently in season), add in some different greens like peas or broccoli. Bowls are great for cleaning out that veggie crisper!

Tasty Tuesday: Recipe - *FRESH PREP* - Miso Glazed Salmon with Seasoned Sticky Rice and Bok Choy

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

We've partnered with Vancouver company Fresh Prep for this week and next to bring you today's Tasty Tuesday recipe.

How does Fresh Prep work, you might ask? - You just create an account and tell them your taste (meat, veg, fish, gluten or dairy free etc) and delivery preferences when you sign up. Then every week, they deliver you prepped and portioned ingredients for however many meals you’d like along with easy to follow recipe cards for you to cook meals in under 30mins!

I lean towards fish and veggie dishes (if you couldn't already tell via the weekly recipes), so this week I got a Naan Flatbread (veg) and next week will feature a Miso Glazed Salmon dish. Check out my photos of the process below and the recipe itself!

Tasty Tuesday: Recipe - Spot Prawns and Snap Pea Stir-Fry


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

It's once again Spot Prawn season! The annual Spot Prawn Festival takes place this Saturday at Fisherman's Wharf on Granville Island with cooking demos, sample of coffee, beer and wine, and most importantly, Spot Prawns! You can buy them straight off of the boats as well, and here's a tasty dish you can make with them. (Click here to see last year's recipe).

This is a very straight forward and simple recipe with only a few ingredients. The main thing to remember is to use brown rice for the extra healthy kick!

Tasty Tuesday: Recipe - Ginger Flax Halibut with Sautéed Spinach

I'm eating this right now as I type and let me tell you, it's definitely Tasty Tuesday over here! I borrowed this recipe from Nourished.ca (which has tons of great ideas for meals!) and made it for one person, but it's super easy to double, triple etc.



Make Your Meal Even Healthier Tip:

If you're seeing this outside of Halibut season, it would go great with most white fish, but right now is the time for fresh halibut and it's a great treat. You should be able to pick some up at most farmers markets right now, as well as a good chunk of the rest of the fresh ingredients also needed. Eat local my friends!
