Tasty Tuesday: Recipe - Purple Cauliflower & Purple Potato Soup

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I'm not going to lie to you. I saw purple potatoes and a purple cauliflower and really wanted to make some sort of dish that was purple.

 

Most stores have purple potatoes in right now, and some of the bigger and specialty stores have purple cauliflowers, but you can find everything you need at the farmers markets, like I did!

 

Make Your Meal Even Healthier Tip:

 

This soup is pureed so you can add a lot into it if you desire. I made sure to use my homemade vegetable stock, so that I could keep the sodium down. The soup definitely requires a lot of salt, but knowing you're starting with none is key to keeping the intake down!

Tasty Tuesday: Recipe - Roasted Butternut Squash Soup

Happy (almost) Halloween!

It's squash and gourd season and this week we're also going to put your homemade soup stock to good use in a delicious Roasted Butternut Squash Soup - a recipe we love from Nourished.ca.


As Alyssa points out on her blog, gourds have tons of antioxidants, beta carotene, and are high in fibre and potassium. Not to mention tasty.

 

Make Your Meal Even Healthier Tip:

 

Since this recipe is dairy AND gluten free, and is vegan to boot, there's not much more you can do to make this soup any better. Except maybe do yourself a favour and make a double batch, and freeze some for one of the grey winter days we know are coming.

Tasty Tuesday: Recipe - Miso Ramen



It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Soup season is upon us. I just want to hunker down with a bowl of noodles all the time now, and with this (vegan) miso ramen I can make a lot of the broth, and freeze it, so that when I want some, I don't have to start from scratch every time! This is way better than the instant-packaged stuff you'll find at the store, trust me.

 

Also, see if you can make this without humming the Chixdiggit song "Miso Ramen".

 

Make Your Meal Even Healthier Tip:


Throw as many kinds of greens as you'd like in here! Don't have baby bok choy? Try kale or spinach! Have some cabbage on hand? Toss that in too! Even if you don't have tofu handy, you can load up on the mushrooms and other veg.

Toasted Quinoa adds a little crunch to this pasta. Get the produce fresh from the farmers market, and you're good to go!

Instead of parmesan, try some vegan parm, which has nutritional yeast and cashews in it. (And it's super easy to make.)

Tasty Tuesday: Recipe - Turmeric Rice

This week I was looking for a good side dish that could go with a variety of dishes, but esp. BBQ! This turmeric rice has a great spice to it, looks super pretty (maybe next to fish or a veg kabob of some sort?) and you can use the leftovers for breakfast burritos (but that recipe is for another day. Here are the basics!

Swap out the jasmine rice for a brown rice - this takes longer to cook, but it's better for you! You can also cook the rice in veg stock to give it more flavour!

Tasty Tuesday: Recipe - Fiddlehead Pesto Pasta

I made it my mission to find some fiddleheads before they went out of season so that you too could make these recipes! They're both vegan, super tasty, and the pasta is excellent both hot and cold, so you should make a batch for dinner and leftovers for lunch!

 

I'm going to take you through how to make the pesto, and then a recipe for the pasta. 

 

NOTE: *** YOU MUST COOK THE FIDDLEHEADS BEFORE YOU EAT THEM! Do not eat them raw. ***

A lot of the recipes I looked at for inspiration had cheese in the ingredients, but nutritional yeast the the job well! If you want to make some vegan parm, this is a great recipe for that.

Also, for the pasta, go for enriched, or whole wheat to make it healthier!

Tasty Tuesday: Recipe - Scallops with Asparagus Puree

I don't know if this happens to you, but I am just one person, and the amount of asparagus that comes in a bunch at the grocery store (when it's in season) is huge. I toss some in pasta or risotto (check out these previous recipes) but I still can't get through it all.

I decided to try out an asparagus puree, and after some googling, thought that some fresh scallops might just be the thing to pair it with.

This dish is really, REALLY easy, and would make a great appy for a summertime bbq, or starter/side for a meal for two!

Vegan? Try making the "scallops" from King Oyster Mushrooms - I haven't made them before, but it looks pretty straight forward, and I've definitely tasted them at restaurants and they were excellent. This recipe here shows you how!

Tasty Tuesday: Recipe - Brown Rice Fried Rice

I've been watching Ugly Delicious on Netflix and there's a episode titled Fried Rice. It delves into Chinese Food and a lot of other wonderful things, but it still left me really wanting to make homemade fried rice.

I don't think I knew about the trick of using day old rice, as it helps to have less moisture when frying it up! To make it healthier, I used brown rice (which is even trickier, as the instructions on the package don't always work out for water absorption). Lean towards using less water so the rice won't be as wet!

 

Make Your Meal Even Healthier Tip:

 

You have so many options when it comes to what to put in fried rice...it could be simple, or it could be loaded up! Make it vegan by either substituting the fried egg for a tofu scramble, OR simply brown some tofu and add it in. The veg is up to you as well, I love the crunch of peas in my rice...toss in some carrots, or maybe broccoli and cabbage (great way to use leftovers/what is in your veggie crisper!). Whatever you decide, load it up with goodness!

Tasty Tuesday: Recipe - Beet Pesto Pasta

Remember sunshine? *sigh* Vancouver's been such a tease... I literally chose this recipe because I wanted some sort of bright colourful food after so many rainy days.

Beets are just the best. I'm sick right now and they have so many great things to help. They're immune-boosting - being high in vitamin C, fibre and potassium!, they're pretty much fat free, and seriously just looking at pink pasta makes me feel better.

You can play with the ingredients in the sauce depending on what you like, but here's the basics for a tasty meal.

 

Make Your Meal Even Healthier Tip:

 

I threw a bunch of extra good stuff in the sauce. If you're making a thicker pesto it's very easy to do. Nutritional yeast, hemp hearts...you can even mix in some collagen powder without messing with the taste!

Go for whole wheat or enriched pasta (or gluten free if you prefer), and I'd serve it with a nice green salad on the side.

Tasty Tuesday: Recipe - Pumpkin Orzo

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Have leftover pumpkin puree kicking around from Thanksgiving still? (You can also use squash if you have that instead!) This is an awesome way to use it up! (These Pumpkin Muffins & a Pumpkin Smoothie are also super tasty.) It basically tastes like a spicy and earthy mac'n'cheese type dish...and it's quick and hearty. Great for post-workout fuel!

Make Your Meal Even Healthier Tip:

Eliminate the cheese and use nutritional yeast to make this vegan, or go half and half to keep it lighter. The pumpkin/squash is creamy already, so it doesn't need too much of a kick!
