Tasty Tuesday: Recipe - Farro "Super Bowl"

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Clearly there's a double meaning this week with the recipe for the game on Sunday, but this bowl can be consumed any day of the week. It's also great cold/as leftovers, so you can make a batch and take some on the go the next day. Farro is great, but if you don't have it on hand, try brown rice. The texture of the farro (when cooked well) is perfect for a fried rice bowl. And if you're looking to spice it up, add your favourite hot sauce!

 

Make Your Meal Even Healthier Tip:

 

Most fried rice will suggest adding a fried egg to it, but you can skip it to make it vegan/or if you're not into eggs. If you want to make it more of a dinner meal, rather than a lunch to go, you can think about adding something like tofu, and if you don't have leeks or brussels sprouts on hand (though both are currently in season), add in some different greens like peas or broccoli. Bowls are great for cleaning out that veggie crisper!

Tasty Tuesday: Recipe - Farro Salad with Dried Cranberries, Golden Raisins & Pistachios


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Winter salads are some of my favourites, you get a kick of fruit (be it dried), and nuts for crunch, and the base possibilities are endless. I had some farro grains kicking around and went looking for a recipe to work with.

I combined a few ideas and tweaked the ingredients a bit (and debated making it a breakfast bowl), and landed with this mixture. Feel free to substitute the nuts for whatever you have on hand (walnut might be a good alternative), and regular raisins for golden, or apricots for the cranberries. This is an easy one to work with what's in the cupboards.

Make Your Meal Even Healthier Tip:

There's not much more you can do to this salad to make it even healthier, but you can always pack it with even more good stuff. Allergies? Go nut free. Gluten free? Try quinoa instead of farro. You could even wilt some spinach and stick it in there or throw in a handful of chickpeas!

Tasty Tuesday: Recipe - Roasted Heirloom Carrots with Chickpeas & Farro


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I found these gorgeous rainbow heirloom carrots at the farmers market the other day and knew I wanted to do something cool with them. So I scoured the internet looking for just the right recipe, and found it on Cookie & Kate. I did some adjustments, making a smaller portion size, and present it now for you!

Make Your Meal Even Healthier Tip:

Eliminate the crème fraîche to make it vegan (you can make a tahini type sauce or use vegan sour cream with some lemon and garlic).

Farro is a grain I've never worked with before but it turned out to be really tasty! There are some Canadian growers (I bought GRAIN's farro, which comes from Etzikom, AB), and it's also called Emmer if you're having trouble finding it!
