Tasty Tuesday: Recipe - Mushroom Crostini


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Well 2016, is almost over, "FINALLY!" I'm sure some of you are saying. Between the drama of the year, and finally getting over the holiday festivities it's time to start fresh.

Speaking of fresh, I wanted to make sure everyone had a great, light and healthy appetizer to bring to their NYE parties or something you can make in the future for a dinner party year round.

The big bonus of this one, is that I used a lot of leftovers from the holiday meals, including a baguette that was starting to get a wee bit hard.

Have a safe and happy NYE, and we'll see you in 2017 for the New Year, New You Challenge!

Make Your Meal Even Healthier Tip:

Multigrain or whole wheat baguette is great for this dish, esp as the slices are so thin. Also, you can find yourself some great vegan nut cheese for this one, or skip it all together and toast the baguette slices with a bit of olive oil. The mushroom mixture is savoury enough to stand on its own.

Tasty Tuesday: Recipe - Persimmon Smoothie


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

What even IS a persimmon? This is what I asked myself, as I was placing the two different kinds into my basket (they were on sale and I'm adventurous for this blog okay?).

Turns out, yes, they are a fruit, and there are two main kinds (pictured below). One, the smaller of the two, you can eat like a peach, pealed, or bite right in. The other one (bigger in size) needs to sit and ripen or else it apparently tastes way too astringent. This second kind is the one that I used for the smoothie, after I let them sit on the window sill for several days until they were very squishy. (Here are some tips.)

I decided to go with a smoothie, because blending felt the safest route for a fruit I've never had before.

I looked at at few recipes and decided on some other ingredients, and I'm very happy with how it turned out. Somewhere between a pumpkin smoothie and an orange julius.

There are always so many things you can add into smoothies that blend in without being detected. Hemp seeds, coconut oil, protein mix. The world is your oyster, just keep it balanced and nutritious!

Tasty Thursday: Recipe - Beets, Tomato, Mozzarella Salad


It's "Tasty Thursday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Busy week, and sorry for the delay, but hello from Ontario! I'm here for the next two weeks, but am not going to neglect some healthy eating!

Summer is being wonky, weather wise, out here, but the produce is coming in still. So I thought this colourful salad was the way to go. There is a restaurant in Toronto that does this salad (and wonderful pizza) and I was craving it. Excellent if you're eating out on a deck, or at a bbq, or even for a quick lunch!

Make Your Meal Even Healthier Tip:

Make sure to find nice, FRESH, mozzarella - it's usually in the deli section at the grocery store. Or seek out some vegan cheese - specifically some nut cheese, maybe a nice goat cheese crumble. Do what suits you best, but this recipe is chock full of goodness.
Oh! And if/when you can find golden beets, you can switch the whole thing up and use red tomatoes or heirlooms.

Tasty Tuesday: Recipe - Rhubarb & Almond Chia Pudding Bowl


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Rhubarb season! This delicious plant is at farmers markets, and grocery stores everywhere no, so no excuses. I made this into a breakfast bowl, but you could totally put it in a to-go container like a mason jar and eat it on the run. Again, no excuses. Much of the prep is done ahead of time and you could easily double it to make more for the week to come.

I mixed a few recipes together to get this one, eliminating a lot of unnecessary sugar from the mix, but the compote is a breezy and the pudding is basically shake it up and let it sit! So don't be intimidated.


Make Your Meal Even Healthier Tip:

Those bits you see aren't just garnish to make the photo look pretty, they're super healthy. But, don't have hemp hearts on hand? Toss some pepitas on there. No cacao nibs? Try coconut flakes. Or just toss some more fresh fruit on top.

Did you know that turnips are in season. I know, I know...it took me a while to decide what kind of recipe to put them in, as it's not exactly a go-to veggie at the grocery store! But turnips have a lot of health benefits, and with this wacky winter weather (warm, COLD, rain, snow?!, sun!), having something hearty, nutritious, and shareable like a shepherd's pie sounded like just the trick. Also this couldn't be easier to make, and it'd vegan!

Make Your Meal Even Healthier Tip:

All the vegetables in this recipe, from start to finish can be raw, fresh ingredients. No need for packaged foods or canned. If you have things like frozen corn or peas from the summer, feel free to add them in! And as always, use that frozen vegetable stock from the freezer - so handy!

Tasty Tuesday: Recipe - Tomato, Basil & Mozzarella Skewers

How are you doing with the New Year New You challenge? Are you on track both exercise wise and clean and healthy eating wise?

I've been dipping into the Salad Library over the last two weeks and there are some delicious meals in there. I came across the Tomato Mozzarella Salad with Balsamic Reduction pick that Natalie Langston chose, and decided to modify it for today's recipe!

I'm at a lot of events that have pass hors d'oeuvres and whenever the skewers of tomato with basil and mozzarella come by I get excited. They're such a clean crisp and refreshing bite that I can feel good eating, and I figured they'd be perfect for house parties and get togethers. No mess, one bite/mouthful, and most importantly: TASTY!

And honestly like the salad recipe says, the balsamic reduction makes the whole thing 10x better, and is simple to do.


Make Your Meal Even Healthier Tip:

Make sure when you're getting the mozzarella for this dish that you look for the 100% Canadian Milk symbol on the package. I learned a while ago that if this symbol is missing it means that the cheese "can contain modified milk ingredients or milk ingredients imported from Europe, the United States and even as far away as New Zealand". Not only does buying cheese with the symbol guarantee that you'd getting a product from Canada exclusively, it also means you're supporting our farmers. It's great to know exactly what you're putting in your body!
