I inhaled these! I saw something similar a while ago and had some cauliflower in my fridge and decided to try my hand at them. Great to bring to those Christmas parties that seem to be every day now!

 

Make Your Meal Even Healthier Tip:

 

Not sure if you can make these with a flax egg to make it vegan, but it will likely work - use vegan mayo instead of greek yogurt too.

Tasty Tuesday: Recipe - Purple Cauliflower & Purple Potato Soup

I'm not going to lie to you. I saw purple potatoes and a purple cauliflower and really wanted to make some sort of dish that was purple.

 

Most stores have purple potatoes in right now, and some of the bigger and specialty stores have purple cauliflowers, but you can find everything you need at the farmers markets, like I did!

 

Make Your Meal Even Healthier Tip:

 

This soup is pureed so you can add a lot into it if you desire. I made sure to use my homemade vegetable stock, so that I could keep the sodium down. The soup definitely requires a lot of salt, but knowing you're starting with none is key to keeping the intake down!

Tasty Tuesday: Recipe - Cauliflower Rice with Prawns, Beans & Corn

I recently took a camping trip and worked on a few recipes that you didn't need a campfire for, since it's fire ban season. This was my first foray into cauliflower rice and it was a huge success.

If you make it ahead of time, you can freeze it and then it will thaw in the cooler (or if you're making it at home, thaw it in the fridge, or use right away!). Everything ends up in a foil packet, that you toss on the bbq to cook, but you could also do it in the oven (or even a pan maybe. But the packet requires the least amount of work!


You can also make the corn on the BBQ at a campsite or at home. I did it ahead of time, cut the kernels off and froze them as well as the 'rice'.

 

Make Your Meal Even Healthier Tip:


Make it vegan and eliminate the prawns, and toss in any other veggies you feel like!

This dish was a combination of a farmers market trip (2 actually) and a 'what's left in my fridge' situation. You can basically throw any summer vegetables in here and it will be delicious.

The zucchini noodles also help keep it light, and of course gluten free! If you want to keep it all veg, don't add the shrimp!

It's not always easy to eat your veggies, or get other people to eat them, esp. around the holidays where you know there is some great dessert coming up.

This recipe is insanely easy, quick, and really really tasty. On top of that, your kitchen is going to smell heavenly. You can make this for a meal for yourself, or as a side dish for a dinner - excellent for the holidays.

You can likely pick up all of these items at your local farmers market, but if not, go organic and aim for local!

Tasty Tuesday: Recipe - Lemon & Asparagus Pasta with Cauliflower Alfredo

One of the main veggies I think about when I think Spring is asparagus. That said, it's not everyone's favourite (though it should be, check out these health benefits), so if you're not feeling it, substitute fresh and local peas. No matter what, as a base you're going to love this dish and the sauce is dairy free, but you'd never know it. Plus it's super easy!

As always, you can substitute pasta for green noodles like zucchini, but if you are craving the actual thing, like I was, pick a brown rice one, enriched wheat ones, or gluten free.
