Tasty Tuesday: Recipe - Vegan Hollandaise

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I wanted to try my hand at playing with aquafaba, and saw many things for meringues and mayo, but I thought to myself "could you make a vegan hollandaise sauce out of it.

Thing is that it's not egg whites in the sauce, but the yolks. But really it's about the consistency and the flavour right? So I think I did a pretty good job after a bunch of research and googling. You're not going to get the exact same thing, but this was a great sauce, and super straight forward, so I call it a win.

 

Make Your Meal Even Healthier Tip:

 

You can use this on any kind of benny, including with eggs if you're not vegan, but I threw a bunch of veggies on one, smoked salmon on another and it all went very well together. So this is for anyone that wants to cut back on the eggs and butter in a rich sauce like this, but still have their Sunday benny.

I always like finding tasty uses for lots of leftover black beans. Bonus: These can be frozen and reheated for busy mornings when you don't have much time!

Make it vegan and go with a tofu scramble instead of eggs, and use vegan cheese to bind the quesadilla.

Honestly I could eat tacos every single day...and breakfast tacos definitely help with that desire.

The toppings on the tacos are all up to you...if you have an avocado on hand, throw that on there. Vegan cheese? Go for a sprinkle! Cilantro in the crisper, why not? As long as you start with your base, you can go a lot of ways.

Tasty Tuesday: Recipe - Rhubarb Banana Bread

Rhubarb is in season! I already made a coulis with some frozen raspberries from last season for a dessert, but I wanted to make something for breakfast...a healthy something! This banana bread is made with whole wheat, and has no added sugar! The small bits of rhubarb add a delicious pop during each bite, just make sure you cut them small enough so it's not super chunky!

Make Your Meal Even Healthier Tip:

If you use maple syrup instead of honey, and make some flax eggs instead of real eggs, you can make this a vegan loaf! And be sure to share the wealth and don't eat it all alone!

Tasty Tuesday: Recipe - Breakfast Burritos

These have been lifesavers on mornings when I don't feel like making breakfast, but need to eat before a workout. You can basically stuff them with anything you'd like. Make them vegan, or go with eggs and turkey sausage. Freezing them is great, and you can make a big batch and then be good for a few weeks!
[The tofu ones are basically a vegan scramble in a burrito, I borrowed the seasoning mix from Minimalist Baker, but you can sub in whatever seasoning you prefer!]

Make Your Meal Even Healthier Tip:

If you're making these and aren't freezing them (eating them right away), add in some greens. I found when reheating from frozen the greens did NOT do well, but it taste great if you're eating them on the spot. Sauté some kale or spinach and add them into the mix. These are both so flavourful, you don't need cheese, but if you're adding, do a small amount, or go for vegan cheese!

Tasty Tuesday: Recipe - Apple Sauce Breakfast Bowl

There are apples everywhere at the grocery store, and farmers markets right now for low prices, so I decided to make some apple sauce. Then I wasn't sure what to do with it all besides eat it when I was craving sugar.
I wondered if I could make a breakfast bowl where instead of solely water or milk to cook oatmeal, I could use apple sauce. Which worked far better than I imagined. The toppings I picked from what I had in my cupboard, but you could obviously use whatever you'd like, including apple chunks if you still had any apple leftover!

Make Your Meal Even Healthier Tip:

Start with homemade apple sauce! Here's a recipe from the blog for cranberry applesauce - basically follow the recipe and only use apples, water, and a bit of lemon!

Tasty Tuesday: Recipe - Vegan Lemon Curd Breakfast Bowl

Last week during Dine Out in Vancouver I had a lemon curd dessert from Bufala and decided I wanted to try and make a breakfast bowl version of it. I opted for vegan, and experimented with a few recipes and this one turned out the best. So enjoy!

Make Your Meal Even Healthier Tip:

More toppings! I used a smaller bowl and didn't want to cover the lemon for the photo, but I wanted to add more fruit, some hemp seed and chia seeds. If you can't find pomegranate or seeds (I got the seeds from Whole Foods), go for blueberries or blackberries, or really, any fruit will do!

Tasty Tuesday: Recipe - Kiwi, Lime & Avocado Smoothie Bowl

New Year, New You continues and I hope you're all still on track with healthy eating plans! I checked out the #barreGOALS board the last time I was in the studio to see what everyone was hoping for and decided to make some recipes based on the 2017 goals. First up was "Eat Greens Everyday!".

Well today's smoothie bowl is DEFINITELY green and you get both fruit and veg out of it, plus whatever healthy toppings you want to add. I made the recipe and was getting full halfway through eating it, so it's enough for two almost. 

Make Your Meal Even Healthier Tip:

There's nothing unhealthy about this recipe, but there can always be more good stuff added. Throw some coconut oil in there if you're feeling it, or blend some chia seeds right into the smoothie. Don't like kiwi? Try mango or more banana, or go with avocado slices if you're not feeling all the fruit. Just keep the greens as the base and you're golden

Tasty Tuesday: Recipe - Overnight Oats with Kiwi

Happy New Year and happy first week of the New Year, New You Challenge at Barre. I'm going to make the January recipes even healthier, and super easy for you to make before and after your workouts!

Speaking of quick and easy, this breakfast is about as simple as it gets. Oats, chia seeds, almond milk, kiwi, and a bit of maple syrup...toss them together at night and eat it in the morning before you head to Barre!

Make Your Meal Even Healthier Tip:
You can feel free to add other fruit to this mix if you'd like, I would suggest mangos or strawberry, but kiwis are an excellent base. It's in season in California right now, and therefore plentiful, and is PACKED with the good stuff. Seriously, there's Vitamin C and K, high in fibre, helps digestion and creates alkaline balance.
