Tasty Thursday: Recipe - Beets, Tomato, Mozzarella Salad

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

End of the heirloom tomatoes and fresh beets (esp the colourful ones) season, but you can still find them at farmers markets and some specialty stores.

This is a great cold salad, that you can serve along side a meal, at a dinner party, next to a pizza, or just have for lunch!

 

Make Your Meal Even Healthier Tip:

Make sure to find nice, FRESH, mozzarella - it's usually in the deli section at the grocery store. Or seek out some vegan cheese - specifically some nut cheese, maybe a nice goat cheese crumble. Do what suits you best, but this recipe is chock full of goodness.
Oh! And if/when you can find golden beets, you can switch the whole thing up and use red tomatoes or heirlooms.

The warmer it gets the colder I like my salads, and sometimes lettuce doesn't cut it.

This beet salad is refreshing, easy to make and super colourful! Make a large version of this by doubling or tripling the recipe and it'd be great for a bbq side salad!

 

Make Your Meal Even Healthier Tip:

 

Swap the goat cheese for vegan goat cheese or just skip in general, the flavours in the salad alone are amazing.

Tasty Tuesday: Recipe - Beets & Burrata Salad

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Beets are still in season and can be found all over the place in grocery stores (including golden and other varieties). I really appreciate a good roasted beet that has been cooled overnight and put in a crisp salad, so I thought I'd pair it with a soft cheese.

 

You can make whatever kind of dressing you desire to go with this as you're starting with flavourful but simple ingredients (beets, burrata, field greens). Making your own from scratch is the way to go so you don't end up with unwanted sugar or other ingredients.

You can make this vegan by grabbing yourself some nut-based cheese. Blue Heron Creamery makes a coconut burrata that they sometimes have in their new storefront, just double check before waiting in line. A soft mozzarella will also work as a substitute (including a nut-based version).

Tasty Tuesday: Recipe - Beet Pesto Pasta

Remember sunshine? *sigh* Vancouver's been such a tease... I literally chose this recipe because I wanted some sort of bright colourful food after so many rainy days.

Beets are just the best. I'm sick right now and they have so many great things to help. They're immune-boosting - being high in vitamin C, fibre and potassium!, they're pretty much fat free, and seriously just looking at pink pasta makes me feel better.

You can play with the ingredients in the sauce depending on what you like, but here's the basics for a tasty meal.

 

Make Your Meal Even Healthier Tip:

 

I threw a bunch of extra good stuff in the sauce. If you're making a thicker pesto it's very easy to do. Nutritional yeast, hemp hearts...you can even mix in some collagen powder without messing with the taste!

Go for whole wheat or enriched pasta (or gluten free if you prefer), and I'd serve it with a nice green salad on the side.

Tasty Tuesday: Recipe - Vegetable Salad Rolls with Hummus


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I made these rolls back near Canada Day, as an experiment, and they all were consumed so I'm going to say they were enjoyed.

Dying the rice paper with the beet juice isn't hard, just be careful of the pink stains, and you can totally skip the juice part, it's just pretty fun to have pink rolls, and you don't get a funky taste or anything.

Use fresh veggies from the farmers market. You can find rainbow carrots now, and tons of fancy pepper colours. But everything you can imagine putting in the roll, you can get fresh and local, and usually organic too!

Happy Valentine's Day! Tried to make something cute out of something healthy this week with Beet Chips (in the shape of hearts). These are super easy to make, and you can find regular red beets, golden beets and even candy cane beets right now at the grocery store and local farmers market.
Beers super versatile for salads and meals, but beet chips are tasty, a great alternative to potato chips and are baked!

Make Your Meal Even Healthier Tip:

Change up your toppings! A light dusting of sea salt is great, but add some fresh chopped rosemary in there, or salt & pepper. If you like spicy chips try chilli infused oil, or maybe do a garlic-truffle oil chip!

I really wanted to find a great lunch spot from the list of restaurants, that still fit the clean, fresh eating goal, and Bufala was a stand out (note: they're ONLY doing Dine Out lunches). There's something to be said about eating a really good pizza that doesn't make you feel greasy afterwards. Their stone fired oven delivers light and airy pizzas with exceptionally good toppings. Tons of veggie options to choose from too.

Another bonus: You can get 2 courses for $20, or 3 for $25, so if you take a friend you can split a dessert, or just get an appetizer and a pizza. So many possibilities, but here's what I went with....

Busy week, and sorry for the delay, but hello from Ontario! I'm here for the next two weeks, but am not going to neglect some healthy eating!

Summer is being wonky, weather wise, out here, but the produce is coming in still. So I thought this colourful salad was the way to go. There is a restaurant in Toronto that does this salad (and wonderful pizza) and I was craving it. Excellent if you're eating out on a deck, or at a bbq, or even for a quick lunch!
