Tasty Tuesday: Recipe - Homemade Soup Stock

New Year, New You! Starting off 2019 with a reminder on how to make a super easy (and thrifty) soup stock!

 

Whenever I'm cooking I make sure to put the scraps and ends from my carrots, celery, onions, shallots, garlic, and parsley into a freezer bag for future stock purposes. It cuts down on cost, as well as time and labour, and not to mention WASTE!

 

Soup stock is so simple to make, and it's great knowing exactly what you're putting into your food. You can control the sodium level, and choose between making stock or broth (by adding herbs to the process).

 

Make Your Meal Even Healthier Tip:


Go organic and buy local! Soup stock, be it veg, mushroom, chicken etc, is usually the base of a recipe, and wouldn't you rather know you're making things as healthy and sustainable as possible? Plus farmers markets are always fun.

Also, you can easily store the stock in wide mouth mason jars or in tupperware for easy handling and use in recipes!

It's Christmas today, and New Years Eve is coming up fast and I'm sure it feels even faster those those planning parties!

How about starting the new year off right with a healthy, SUPER easy, and delicious hors d'oeuvre that is bound to be a hit.
This chickpea salad (thanks to The Vegan Project for this recipe, from their cookbook: "Vegan Cooking At Home") can be serves on the side, or like above, made into easy to eat finger food.
The prep is quick and you can make it ahead of time, making party planning a breeze.

The Vegan Project says: "Chickpeas are high in fibre and also have a great amino acid profile. When eaten with rice, you have a complete protein. You don't need to eat the rice at the same time - on the same day is just fine." Awesome!

Tasty Tuesday: Recipe - Shrimp Dumpling Soup

Okay, I know it's not TECHNICALLY winter yet, but the amount of layers I'm wearing, and the desire to hide inside with sweatpants just makes me want all kinds of varieties of soup.

 

I was craving a wonton-esque soup recently, and dug up this recipe that I had because I had leftover lemongrass from this Thai Noodle dish we just made. I've had allergic reactions to most wonton soups that I've had, so, much like when I made the miso soup, I knew making it from scratch meant I can control exactly what goes in here.

This is a big batch of soup and wontons, so make sure you have someone to share it with, and if you want to split it up over two days, cover the wontons well and put them i the fridge, and then cook them in the broth the next day - this way they won't get soggy!

 

Make Your Meal Even Healthier Tip:

 

The fresh herbs in this are really going to make this for you. Add them at the end and pile in as many as you'd like, and feel like you could kill a cold before you even feel sick!

And like I ALWAYS tell you, use your own, homemade soup stock, so you can control the amount of salt and spices you put in it!

I inhaled these! I saw something similar a while ago and had some cauliflower in my fridge and decided to try my hand at them. Great to bring to those Christmas parties that seem to be every day now!

Not sure if you can make these with a flax egg to make it vegan, but it will likely work - use vegan mayo instead of greek yogurt too.

I'm so glad there is no video of my attempts to roll this sushi...I definitely need more practice!

 

Honestly I really just wanted to try my hand at sushi rice, because I want to make a sushi bowl next, but these turned out great, and even if they are messy, man did they taste great!

 

Make Your Meal Even Healthier Tip:

 

You can try this with brown rice, though it's a whole other beast (I might try and tackle in the future), but the obvious tip is to load up the sushi with whatever you'd like veggie wise! I went with simple avocado and cucumber, but tofu, carrots, sweet potatoes, red pepper?... all of those sound like they'd be great (maybe not together, but get creative!).

Tasty Tuesday: Recipe - Vegan Hollandaise

I wanted to try my hand at playing with aquafaba, and saw many things for meringues and mayo, but I thought to myself "could you make a vegan hollandaise sauce out of it.

Thing is that it's not egg whites in the sauce, but the yolks. But really it's about the consistency and the flavour right? So I think I did a pretty good job after a bunch of research and googling. You're not going to get the exact same thing, but this was a great sauce, and super straight forward, so I call it a win.

 

Make Your Meal Even Healthier Tip:

 

You can use this on any kind of benny, including with eggs if you're not vegan, but I threw a bunch of veggies on one, smoked salmon on another and it all went very well together. So this is for anyone that wants to cut back on the eggs and butter in a rich sauce like this, but still have their Sunday benny.

Tasty Tuesday: Recipe - Protein Powder Birthday Donuts

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Last year on my birthday I made this fun smoothie as a treat, but mostly because I wanted to put sprinkles on something.

This year (my b-day is tomorrow!) I played around with protein powder in donuts, reducing the sugar, and using whole grain pastry flour - and baking instead of deep frying them. I present you the results and my once a year sprinkle-topped treat!

 

PS. You'll need a donut pan to bake these. I got mine at Bed Bath & Beyond 

 

Make Your Meal Even Healthier Tip:

 

The only non-vegan item in this recipe is the eggs (make sure your sugar is also vegan) - I didn't try it with flax eggs, but it should work, though the consistency might change! You should be able to find gluten-free pastry flour too if you're GF! Let me know if these work for you!

Tasty Tuesday: Recipe - Cold Lemongrass Noodle Salad

I accidentally got pad thai noodles when I was trying to buy rice noodles, so I decided to make something with them, and oh boy, was it a tasty success!

I'm a wuss when it comes to spice, so you'll have to adjust if you want more or less heat in this, but there are so many flavours in this Thai-inspired dish, you might not even want it!

 

Make Your Meal Even Healthier Tip:

 

This is vegan and is filled with great veggies, but feel free to add more - Or maybe something sweet? Play around with it, and make sure you have leftovers as this dish was even better after sitting overnight!
