Did you cook a LOT of corn for other recipes and freeze a
bunch like I did? Good call. Now take some of it out of the
freezer, grab some of the late harvest tomatoes at the farmers
market and make this super easy, delicious and healthy meal for
yourself, or for a fancy dinner party! Works as an appy (depending
on the tomato sizes) or a main dish.
Make Your Meal Even Healthier Tip:
You can put a variety of toppings on top of the tomatoes when they are ready to be served, I chose a nut-based goat cheese, which is a tasty vegan & dairy free option. Feel free to sprinkle with nuts, or a bit of nutritional yeast, just keep it healthy!
