Tasty Tuesday: Recipe - Halloumi Sliders

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

It's definitely BBQ season! This weather has been amazing. I wanted to see if I could get in on the grill action but without the meat, and wanted to try cooking with Halloumi at the same time.

 

These are very simple and quick, though you could make a jerk marinade and have it sit in that for some extra kick (or another kind of sauce)!

 

Make Your Meal Even Healthier Tip:

 

The burgers can be straight forward, or topped up with veggies of your choosing. You could also see if you can find yourself a vegan halloumi (maybe Blue Heron Cheese one weekend!) and sub it in!

Tasty Tuesday: Recipe - Scallops with Asparagus Puree

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I don't know if this happens to you, but I am just one person, and the amount of asparagus that comes in a bunch at the grocery store (when it's in season) is huge. I toss some in pasta or risotto (check out these previous recipes) but I still can't get through it all.

I decided to try out an asparagus puree, and after some googling, thought that some fresh scallops might just be the thing to pair it with.

This dish is really, REALLY easy, and would make a great appy for a summertime bbq, or starter/side for a meal for two!

 

Make Your Meal Even Healthier Tip:

 

Vegan? Try making the "scallops" from King Oyster Mushrooms - I haven't made them before, but it looks pretty straight forward, and I've definitely tasted them at restaurants and they were excellent. This recipe here shows you how!

Tasty Tuesday: Recipe - Quinoa Bites

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

My mom sent me a recipe for quinoa bites like these and tried it before I could...apparently the result wasn't great. I decided to adapt it and try to improve on the flavours, as well as make them vegan. They're good for on-the-go, and packed with goodness.

 

Make Your Meal Even Healthier Tip:

 

I eliminated the cheese that most recipes like this had, and threw in some nutritional yeast. You could also probably hide some other good stuff in them like hemp hearts or even sunflower seeds. They're chock full of goodness already, and vegan, so there isn't much to change!
