I made this at my parents house while visiting this month, and it's an easy recipe that can be served as an appetizer, or just as your lunch. If there are leftovers, cut a few more wonton wrappers into thin strips, bake them like you would the cups, and sprinkle them over the leftover salad! (In fact, you can do that in general if you're having it as a meal!)
Make Your Meal Even Healthier Tip:
You can get away with a few different vegetables in this salad...snow peas...red pepper...get creative with whatever you have on hand. And if you want to skip the wontons (or don't have any) turn this into a lettuce wrap!

Makes Approx 12-16
INGREDIENTS:
- 1 chicken breast (poached is a great way to make them, or just toss it on the bbq!) - shredded
- 1 cup shredded cabbage (purple for that awesome pop of colour, but green will do)
- 1 cup carrot (shredded or julienned)
- 1 small chopped shallot
- 1 tsp chopped cilantro
- wonton wrappers
- 1 clove garlic, minced
- 3 tsp lime juice
- 2 tsp fish sauce
- 2 tsp rice wine vinegar
- 1 tbsp of olive oil
- 1 tsp sambal oelek (or other spicy chili sauce, or sweet if you prefer)
- 1 tsp Bragg's (or other low sodium soy sauce)
INSTRUCTIONS:
Set oven to 350F, and place wonton wrappers in a muffin tin - shaping them like cups.
In a bowl mix the cooked & shredded chicken with the cabbage, carrots, cilantro and shallot.
In a small bowl whisk the remaining ingredients together until well combined to create the dressing.
Pour over the chicken and vegetables and toss to coat evenly. Cover and place in fridge.
Bake the wonton cups for approx 13-14 mins (watch) until golden brown, then remove and let cool. (You can make additional cups, while the other are cooling).
Once cool. plate, and fill cups with chicken salad, garnish plate with some more cilantro, and serve.
