Tasty Tuesday: Recipe - Labour Day Potato Salad!


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

It's almost Labour Day and the weather is still pretty great. So if you're having a BBQ, here is a perfect, vegan potato salad that everyone should love!

Make Your Meal Even Healthier Tip:

If you need to go nut-free, there are tons of other vegan dressings out there on the internet. Small potatoes of different colours are now in season (purple, red AND white), so be sure to grab some from the farmers market this weekend! Also, throw as much veg as you want in this recipe. There are beautiful purple peppers out there now, which would be fun instead of the traditional red pepper (or both!).

This dish was a combination of a farmers market trip (2 actually) and a 'what's left in my fridge' situation. You can basically throw any summer vegetables in here and it will be delicious.

Make Your Meal Even Healthier Tip:

The zucchini noodles also help keep it light, and of course gluten free! If you want to keep it all veg, don't add the shrimp!

Tasty Tuesday: Recipe - Curried Chickpea Salad Sandwich


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

This super easy recipe is great for lunch, and another awesome camping recipe! You can prep everything at home, and double it if you have more mouths to feed. And, if you're like me, and don't have a great fork to mash with while camping, cover your mallet in a baggie or plastic, and use it!

Make Your Meal Even Healthier Tip:

Make sure you use whole wheat or multigrain bread, or you can even skip it and have a wrap. Hot tip (literally), use the leftover chickpeas to make chickpea popcorn on the bbq or fire for a tasty and healthy snack!

Tasty Tuesday: Recipe - Vegetable Salad Rolls with Hummus


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I made these rolls back near Canada Day, as an experiment, and they all were consumed so I'm going to say they were enjoyed.

Dying the rice paper with the beet juice isn't hard, just be careful of the pink stains, and you can totally skip the juice part, it's just pretty fun to have pink rolls, and you don't get a funky taste or anything.

Use fresh veggies from the farmers market. You can find rainbow carrots now, and tons of fancy pepper colours. But everything you can imagine putting in the roll, you can get fresh and local, and usually organic too!

Tasty Tuesday: Recipe - Campsite Bolognese


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

You don't HAVE to make this at a campsite, it's just a good healthy meal instead of hotdogs and chips for dinner!

I'm heading out camping this week and I might just have to make this at the site. It's an easy 1 pot (2 for the pasta) meal that you can slow cook on a camp stove, or if you're in a non fire-ban area, over the campfire.
Do all of the prep at home ahead of time and you can throw everything into the pot as you go on site with far less mess and hassle!

Make Your Meal Even Healthier Tip:

You can skip the wine, but it definitely adds flavour to the pot so compensate with the rest of the ingredients and test it out. Make sure you use either whole wheat/grain pasta or brown rice pasta!
