This week we gave you some of our picks for healthy and clean eating during the Dine Out Vancouver Festival, and now we're going to break a few of those down so you can see just how delicious the menus are. Try not to drool on your keyboards or phone.

I really wanted to find a great lunch spot from the list of restaurants, that still fit the clean, fresh eating goal, and Bufala was a stand out (note: they're ONLY doing Dine Out lunches). There's something to be said about eating a really good pizza that doesn't make you feel greasy afterwards. Their stone fired oven delivers light and airy pizzas with exceptionally good toppings. Tons of veggie options to choose from too.
Another bonus: You can get 2 courses for $20, or 3 for $25, so if you take a friend you can split a dessert, or just get an appetizer and a pizza. So many possibilities, but here's what I went with....
Appetizer:
There are 3 appies to choose from including a Bison Carpaccio, and a Kale Caesar Salad, but the Arugula & Beet Salad was a no brainer for me (I love beets!). Sprinkled with goat cheese, toasted hazelnuts, and a fennel vinaigrette, this salad is super light and really tasty. The hazelnuts add this great crunch and pair really well with the beets (both red and golden, by the way).
Entrée:
Bufala went big this year and put ALL of their pizzas on their Dine Out menu to choose from! (Seriously, it's a long and mouth watering list). I've had their Margherita Pizza before (I always go for that the first time at a pizza joint, because if you can't do a Margherita pizza well, then something is wrong. Needless to say, theirs was excellent.)
I felt like I was on a mushroom kick this week, so I went with the Funghi Pizza, and it was perfect. Each bite had roasted mushrooms, greens (watercress) and just the right amount of cheese to make me happy.
I'd definitely suggest going with a friend (or two) so you can share slices from the different pizzas, because it is hard to choose just one.
Dessert:
Me: "Can I just photograph one of the desserts? I'm so full I can't eat one"
*5 mins later*
"Yea, I'm going to eat this."
The Lemon Curd dessert was just the right size and so light and refreshing it was almost required eating! It comes with a pistachio crumble, with fennel seeds, and little drops of Italian meringue.
I think my new mission is to use this as inspiration to turn it into a healthy breakfast bowl. But in the mean time I'll just dream of the dessert.
