Tasty Tuesday: Recipe - Chicken Soup


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

So much turkey! I bet you're either itching for a change-up, or don't know what to do with all the leftovers! Well, I made this soup with chicken, but you can easily do the exact same with leftover turkey meat.

 

The chicken came roasted from a healthier grocery store, and is a quick meal during the week in itself. If you're just one person, you'll likely have leftovers and that's perfect for making soup!

Make Your Meal Even Healthier Tip:

As always, it's great to start with your own homemade stock. I broke the chicken down, removing the meat and setting some aside for the soup, and then used the bones/leftovers to make stock (following this, except with chicken too!). It's a great way to control the sodium going into your soup!

Sometimes you just want a warm winter salad when the temperature drops. The red quinoa is a nice pop, and reminds me of fall, but you can use any kind of quinoa you might have on hand.

Make Your Meal Even Healthier Tip:

Add in more good stuff! Pepitas, nuts of various kinds, dried fruit, hemp hearts. You can hide a lot in this salad!

Tasty Tuesday: Recipe - Pumpkin Orzo

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Have leftover pumpkin puree kicking around from Thanksgiving still? (You can also use squash if you have that instead!) This is an awesome way to use it up! (These Pumpkin Muffins & a Pumpkin Smoothie are also super tasty.) It basically tastes like a spicy and earthy mac'n'cheese type dish...and it's quick and hearty. Great for post-workout fuel!

Make Your Meal Even Healthier Tip:

Eliminate the cheese and use nutritional yeast to make this vegan, or go half and half to keep it lighter. The pumpkin/squash is creamy already, so it doesn't need too much of a kick!

This breakfast is super easy to make, tasty, and can be loaded up with so much goodness. Adjust the spices to your liking, shake with your favourite non-dairy milk, leave overnight and grab it to go the next morning or put your favourite frozen fruit in it!

Make Your Meal Even Healthier Tip:

You can add a lot of great toppings, but go for what is in season, or you have frozen in the freezer! Hemp seeds, dried cranberries, or nuts are also great options.

Every now and then when I go out to a restaurant and I get a salad that has apple in it, I think to myself: Why don't I do this at home more? Apples are so great because they store well over winter, so you can get BC apples pretty much year round. I decided to go with a kale salad, as it's also in season (I'm about to replant some winter kale on my patio) and the crunch of the radicchio and walnuts give the kale great texture.

Add in more good stuff if you're feeling it! Pepitas, hemp hearts, dried cranberries, more or different nuts.

Tasty Tuesday: Recipe - Dairy-Free Seafood Chowder


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

It's cold, and dark, and I just want to eat soup every day.

I really like chowders, but I find that they're so heavy with dairy that I end up feeling awful afterwards. I wanted to make one that'd be a healthy and hearty meal. You'll want to play with the spices, and get it to your liking.

Make Your Meal Even Healthier Tip:

More veggies! This soup can (and should) be on the thicker side, so load it up with potatoes, or if you prefer corn, toss in some corn (mine is frozen from this summer, which is great for soups). Skip the bacon that most chowders also have to lower the salt content!

No, actually, it's my birthday today and this is pretty tasty!

You can add vanilla protein powder to the smoothie for some more goodness, but it will likely turn the smoothie green (I tried it, it did). But if you don't care about colour and just want a healthy vanilla smoothie, go for it! (You could use a scoop of flavourless too.)
