During isolation, I had a baguette, that immediately went too hard to eat on it's own, so I figured I should slice it up and make it toasty.

These are great as an appy, or for pass hors d'oeuvres - but I honestly ate them all myself.

I had a package of mixed mushrooms at the time, but if you can find some fresh wild ones in season (like morels or chanterelles or blue foot mushrooms) you can use those too!

Tasty Tuesday: Recipe - Chicken Souvlaki Skewers

I wish I could take credit for this marinate, but I totally stole it from my university roommate (sorry Zach if you're reading this!). I've had it in with all the recipes from my mom/home for such a long time and every now and then, I remember it and get excited.

I have found it best to let it marinate for as long as you can so it can really soak it up, giving it a shake whenever you open the fridge and a good mix before it sits overnight.
If you're pressed on time, try cooking it in a pan, so the good stuff doesn't just drip off.

 

Make Your Meal Even Healthier Tip:

 

Skipping the bread here, and/or not making it into a wrap, (like I tend to do) means more room for the good stuff. You could also add a side of wild rice or more veggies! - I bet you could do this with tofu, and brown it in a pan too - if you're veg/vegan, give it a try!

And of course, making your own homemade tzatziki is SO much better - and I made it dairy-free!

Tasty Tuesday: Recipe - Lemon Risotto with Morel Mushrooms, Asparagus & Peas

Some really delicious foods are coming into season. There's some overlap right now, which means asparagus is still coming in, and morel mushrooms are just being foraged! Which means it's time for one of my favourite recipes: Lemon Risotto, from The SoBo Cookbook from Tofino!

 

Make Your Meal Even Healthier Tip:

 

This dish is great as just a side to a main dish like the Herb-Crusted Halibut recipe that the cookbook also features. The recipe calls for veggie stock, so obviously I used the homemade version I keep in my freezer (far less salt!). You can make it vegan by using vegan butter to fry up the shallots and garlic, and skip the added pecorino cheese. It's pretty darn creamy as is!

Tired of the same old banana bread in isolation? Make these SUPER EASY Banana Blueberry Muffins!
They're vegan and gluten-free and a great way to use up those ripe bananas, and frozen BC blueberries.

Just try not to eat them all in one go!

I used almond flour here, but you could definitely use whole wheat if you need nut-free (or whole wheat is what you've got!). And I used frozen BC blueberries from last season (but be sure to make them again when the new bluebs are out!).

Tasty Tuesday: Recipe - Spot Prawn Stack

I had some frozen spot prawns leftover from the last spot prawn season that I wanted to put to use, and these fun little stacks would be great for appetizers for a late summer dinner, or hors d'oeuvres at a bbq...you know, when we can do that again!

Ideally we'd have been snacking on these during this past long weekend, but perfect them now and impress at your next socially distanced get together! 

 

Make Your Meal Even Healthier Tip:


If you don't have spot prawns (the season is just beginning this week, so you should be able to find them easily soon), regular frozen ones will do (but make sure they're Ocean Wise), or you can use some crab so it's more like a California roll.

Tasty Tuesday: Recipe - (Vegan & Gluten-Free) Buckwheat Waffles

I had some buckwheat flour kicking around from when I had my elimination diet and went gluten-free for a while, and decided to try my hand at some buckwheat waffles.


They can be pretty dense, so I mixed in some brown rice flour to keep this gluten-free, and used coconut oil instead of butter, and a flax egg to make it vegan. Toss in a bit of protein powder, and hide some chia seeds in there, and you've got a heathy breakfast and you didn't even know it.

I feel like there is so much good stuff in these waffles, that it really comes down to the toppings to make it healthy. You're going to need maple syrup as they're a bit on the drier side, but if you toss on some banana slices (I don't like raw banana, or else I would have used it), any kind of berries, or even a good nut-butter, you're golden.

Cinco de Mayo landing on a Tasty (Taco) Tuesday?! YES PLEASE.

One of the best things about this one is that most of this stuff was already in my cupboards. Fresh cilantro and limes were the only things I needed to grab.

Jackfruit replaced the meat that you'd be having, and the crema is nuts and veg - so my suggestion is to get good tortillas! I had ones from Lita's Mexican Food - they're vegan and organic - check them out!

Tasty Tuesday: Recipe - Rosé Pasta and Sauce (with Sausage)

More adventures in homemade pasta. I tried making this for Valentine's Day but ran out of time to post it...so here you go!

Instructions are the same as the other homemade pastas, but making it red this time with either tomato paste or pureed roasted red pepper.

Figured we'd stick with the rosé theme and make the sauce pink too. Turned out a bit more red, but that fine as it was delicious.

I used vegan sausage in the final dish to keep the whole thing vegan, and when I make this again, I'll likely throw more vegetable and greens in there. Broccoli, or spinach, maybe roast some veg up in the oven or on the bbq. Either way, between the pasta, and the sauce, you're getting a lot of tomato, so try and hide some other good stuff in it!

Tasty Tuesday: Recipe - Bami Goreng

Okay, so I'm Dutch on my mom's side and from what I understand there is a large Indonesian population in the Netherlands, as Indonesia used to be a colony. While I'm not fully up on all the history on that, I know that some of the cuisine was adopted by the dutch, and ever since I was little there were a few dishes that my Oma and my mom would make, specifically Bami Goreng.

Traditionally it's make with pork (or chicken), but I really don't eat much meat, and my mom suggested making it with tofu. So I went to the dutch store in New West and got the noodles, I used the dutch seasoning packet (one day I'll try and make it from scratch) and set to work on my experiment.

It. Was. Great.

I got some looks from my relatives when they saw the word "TOFU" but hey, if it means I can still enjoy it and get protein too, I'm in.

I'm sure you can get away with noodles that aren't from the dutch store, and definitely could make the spice mix at home.

The recipe also calls for a fried egg for each serving, which I skipped, but you could do if you felt like it. 

 

I might add some more greens into this the next time, or red pepper, just to have a few more veggies in the mix.

Tasty Tuesday: Recipe - Baked Fish with Wild Rice & Potatoes

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!


There are always a few recipes that I have kicking around from my mom that have way more cheese and mayo and things than I eat now, but every now and then I dig one out that I'm craving, and think to myself: I wonder if I can make this healthier, or vegan, or dairy-free... and that's what I did with this fish dish.

It's baked, so you don't have to fry it, and I've only used dairy-free cheese and sour cream, and even the bread crumbs are gluten-free, but that's obviously up to you!

 

Make Your Meal Even Healthier Tip:


Keeping this dish healthy is all about the sides! I chose wild rice and potatoes, but you can add a side of steamed broccoli, and/or cauliflower, or even just a salad. Don't just go for fries! Oh, and don't forget to keep the fish Ocean Wise. Look for the sticker, or ask your fish monger.
