Tasty Tuesday: Recipe - Dairy-Free Seafood Chower


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

It's cold, and dark, and I just want to eat soup every day.

I really like chowders, but I find that they're so heavy with dairy that I end up feeling awful afterwards. I wanted to make one that'd be a healthy and hearty meal. You'll want to play with the spices, and get it to your liking.

Make Your Meal Even Healthier Tip:

More veggies! This soup can (and should) be on the thicker side, so load it up with potatoes, or if you prefer corn, toss in some corn (mine is frozen from this summer, which is great for soups). Skip the bacon that most chowders also have to lower the salt content!

It's my birthday and I'll put sprinkles on my smoothie if I want to!

No, actually, it's my birthday today and this is pretty tasty!

Make Your Meal Even Healthier Tip:

You can add vanilla protein powder to the smoothie for some more goodness, but it will likely turn the smoothie green (I tried it, it did). But if you don't care about colour and just want a healthy vanilla smoothie, go for it! (You could use a scoop of flavourless too.)

It's so cold. I stepped in a river during a downpour up to my ankles the other day. I needed tomato soup.

While bumming a Thanksgiving meal last week, I met Alex Clark, the Farm Leader at Field House Brewing, and it just so happened that she brought a tonne of produce from the farm. I went home with a whole bunch of tomatoes, and beets (HUGE beets, the size of my head). These tomatoes are pictured below!

Fresh. Local. Simple. This soup doesn't need too much to it. Blend it up, maybe add some nutritional yeast, and you're set.

Tasty Tuesday: Recipe - Brussels Sprout Flatbread

I had a hankering for flatbread and an excess of brussels sprouts the other day and remembered seeing this recipes i wanted to try. If you google "Brussels Sprouts Pizza" a lot of recipes come up, with the same basic ingredients, so I was on a mission to make this healthy and light!

Make Your Meal Even Healthier Tip:

My best tip is to make the dough from scratch. You make everything else from home, try a simple whole wheat quick dough. I have a trusty bread-maker so I threw the ingredients in there. Also, lay off the cheese. A simple sprinkle of parm, some nutritional yeast, or vegan cheese will do the trick to hold it all together, you don't need too much!

Tasty Tuesday: Recipe - Spicy Cod with Rainbow Quinoa & Broccoli


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

This is a great, light, tasty lunch. You can even just make the quinoa pilaf on it's own if you are only looking for salad (it did take up about 2/3rd of the meal). I had the cod in the freezer, so it was easy to pull out in the morning, and have it thawed by the evening (or do it overnight for lunch the next day).

Make Your Meal Even Healthier Tip:

Make sure your fish is ocean wise and sustainable. Cod is a great choice - but here's a list of BC fish, what's in season, and how it's caught! Oh, and you can totally double the quinoa pilaf and have some the next day as an after workout snack or lunch!

Tasty Tuesday: Recipe - Chicken & Vegetable Salad in Baked Wonton Cups


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I made this at my parents house while visiting this month, and it's an easy recipe that can be served as an appetizer, or just as your lunch. If there are leftovers, cut a few more wonton wrappers into thin strips, bake them like you would the cups, and sprinkle them over the leftover salad! (In fact, you can do that in general if you're having it as a meal!)

You can get away with a few different vegetables in this salad...snow peas...red pepper...get creative with whatever you have on hand. And if you want to skip the wontons (or don't have any) turn this into a lettuce wrap!

Tasty Tuesday: Recipe - Chocolate Zucchini Bread

I was visiting the Sunshine Coast recently and the Persephone Brewing Company had some fresh produce on site for sale. There was a zucchini that was pretty much bigger than my head that was only $1. I'm going to be so sad when the summer vegetable season is over...

I made this zoodles recipe out of half of it, and decided to try my hand at a zucchini bread finally. I found mine was on the dry side, so don't skimp on the apple sauce or the zucchini!

Make Your Meal Even Healthier Tip:

I have had some organic cocoa powder for a while, just begging to be used, so I am going with chocolate, but you don't have to add it, but it's a great kick. Also I used cacao nibs instead of chocolate chip to keep it healthier, and you can either eliminate those, use nuts instead of, or go half and half!

Tasty Tuesday: Recipe - Poached Cod with Potatoes & Sausage

When you are brought fresh caught cod from the east coast, you start dreaming up all the things you can make with it - so apologies in advance if there are lots of fish recipes over the next few months. I spotted this recipe when I was looking for ideas for foods to make while camping, and decided I could modify it to make it a bit healthier, esp when making at home!

Make Your Meal Even Healthier Tip:

If you, like I do, have a home garden, now is a great time to pull the veggies for a side dish. I had a TON of lettuce growing, and got some great tomatoes from the farmers market and made a salad, but a green veg like roasted zucchini, or peppers could do the trick as well. Everything from this recipe can be found locally right now!
