Tasty Tuesday: Recipe - Squid Ink Humboldt Squid Pasta


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I saw this pasta on sale at a grocery store recently and immediately knew i had to make a meal with it...I mean, look at it!

Don't be afraid, it was just like regular pasta taste-wise, and did a great job absorbing the flavours of the sauce. If you're not into tomatoes, I'd suggest sautéing some spinach and throwing it in instead.

Make Your Meal Even Healthier Tip:

Make sure that you're getting ocean wise squid! I got some BC Humboldt squid from the Fish Counter on main (in the frozen section), and if you can't find squid, white fish would also work (or some sustainably caught prawns).

I skipped the parmesan that I saw in most other recipes as the dish is full of so much flavour already!

Tasty Tuesday: Recipe - Mushroom, Kale & Lentil Stew


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Remember those couple days of sunshine that sort of proved that Spring really was here, but now we're back to grey and rain and all you want to do is eat pizza?

Instead, make this super easy and really delicious stew that you can have for lunch or dinner (or freeze the second half!). You can use whatever mushrooms you have on hand or can find, lentils are really quick to make and kale is in season all the time!

If you're having it with the toasts, get some multi-grain bread or whole wheat!

Tasty Tuesday: Recipe - Spinach Hummus for St. Patrick's Day!


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

We're at the beginning of the Barre Body Fitness Challenge, and each month I'm going to bring you a recipe for breakfast, snack time, lunch, and dinner! This week I also decided to go green for St. Patrick's day on Friday! Hummus is delicious, packed with protein and super easy to make. Throw some spinach in there for all of it's vitamins and you've got an excellent post-workout snack!

Make Your Meal Even Healthier Tip:

Bake your own tortillas so you can control the salt ratio (I used spinach ones to keep it consistent), and you don't have to limit your veggies to just green. Get some rainbow carrots from the farmers market this weekend and brighten it up!

You can make this gluten free by using chickpea flower for the falafel mixture. But other than that, the recipe is totally vegan! It makes enough for 2 people so you should share, or save some for the next day. That way you can load up the rest of your plate with more good stuff...avocado, olives, some whole wheat pita for dipping in that hummus...

Tasty Tuesday: Recipe - Buckwheat Pancakes!


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

I grew up with "Pancake Tuesday" in school (and yes it's also Mardi Gras today, but I felt I should go for a breakfast food!) but they are not something I make often now. My dad always called them "sinkers", for the feeling you'd get after you eat them...but not these pancakes!
First off, they're gluten-free by using buckwheat flour, and I eliminated the sugar because you can get that kick back in with the fruit and maple syrup. You could also make them vegan (they're dairy free) by substituting the egg (with a flax egg and maybe some mashed banana). These are quick, healthier than their regular counterparts, and tasty!

Make Your Meal Even Healthier Tip:

Depending how dense you'd like to go with these pancakes, you can add some ground flax or chia seeds on them. And of course, have a heaping bowl of fruit on the side for balance and vitamin C!

Tasty Tuesday: Recipe - Pasta Fazool


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Here's the thing, I know it's called Pasta e fagioli, but I like saying Pasta Fazool so much more.

This dish is hearty, full of veggies and beans, and tiny tiny pasta pieces. The snow might be gone, but the weather is still chilly, and if you need a solid dinner after a hard days work and workout, then this is for you. It's SUPER easy, and very simple, and I had almost everything in my house already.

Make Your Meal Even Healthier Tip:

There are a ton of different variations on this recipe, but you can switch up a lot of stuff. Add in some sausage for some protein, change up the beans if you have something different on hand, add in carrots for some more veg. Sprinkle some nutritional yeast on top (instead of parmesan, which is the usual topping).

Happy Valentine's Day! Tried to make something cute out of something healthy this week with Beet Chips (in the shape of hearts). These are super easy to make, and you can find regular red beets, golden beets and even candy cane beets right now at the grocery store and local farmers market.
Beers super versatile for salads and meals, but beet chips are tasty, a great alternative to potato chips and are baked!

Make Your Meal Even Healthier Tip:

Change up your toppings! A light dusting of sea salt is great, but add some fresh chopped rosemary in there, or salt & pepper. If you like spicy chips try chilli infused oil, or maybe do a garlic-truffle oil chip!

Tasty Tuesday: Recipe - Vegan Lemon Curd Breakfast Bowl

Last week during Dine Out in Vancouver I had a lemon curd dessert from Bufala and decided I wanted to try and make a breakfast bowl version of it. I opted for vegan, and experimented with a few recipes and this one turned out the best. So enjoy!

Make Your Meal Even Healthier Tip:

More toppings! I used a smaller bowl and didn't want to cover the lemon for the photo, but I wanted to add more fruit, some hemp seed and chia seeds. If you can't find pomegranate or seeds (I got the seeds from Whole Foods), go for blueberries or blackberries, or really, any fruit will do!

Tasty Tuesday: Recipe - Farro Salad with Dried Cranberries, Golden Raisins & Pistachios


It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

Winter salads are some of my favourites, you get a kick of fruit (be it dried), and nuts for crunch, and the base possibilities are endless. I had some farro grains kicking around and went looking for a recipe to work with.

I combined a few ideas and tweaked the ingredients a bit (and debated making it a breakfast bowl), and landed with this mixture. Feel free to substitute the nuts for whatever you have on hand (walnut might be a good alternative), and regular raisins for golden, or apricots for the cranberries. This is an easy one to work with what's in the cupboards.

Make Your Meal Even Healthier Tip:

There's not much more you can do to this salad to make it even healthier, but you can always pack it with even more good stuff. Allergies? Go nut free. Gluten free? Try quinoa instead of farro. You could even wilt some spinach and stick it in there or throw in a handful of chickpeas!

I really wanted to find a great lunch spot from the list of restaurants, that still fit the clean, fresh eating goal, and Bufala was a stand out (note: they're ONLY doing Dine Out lunches). There's something to be said about eating a really good pizza that doesn't make you feel greasy afterwards. Their stone fired oven delivers light and airy pizzas with exceptionally good toppings. Tons of veggie options to choose from too.

Another bonus: You can get 2 courses for $20, or 3 for $25, so if you take a friend you can split a dessert, or just get an appetizer and a pizza. So many possibilities, but here's what I went with....
