Tasty Tuesday: Recipe - Vegan Hollandaise

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

I wanted to try my hand at playing with aquafaba, and saw many things for meringues and mayo, but I thought to myself "could you make a vegan hollandaise sauce out of it.

Thing is that it's not egg whites in the sauce, but the yolks. But really it's about the consistency and the flavour right? So I think I did a pretty good job after a bunch of research and googling. You're not going to get the exact same thing, but this was a great sauce, and super straight forward, so I call it a win.

 

Make Your Meal Even Healthier Tip:

 

You can use this on any kind of benny, including with eggs if you're not vegan, but I threw a bunch of veggies on one, smoked salmon on another and it all went very well together. So this is for anyone that wants to cut back on the eggs and butter in a rich sauce like this, but still have their Sunday benny.

Tasty Tuesday: Recipe - Protein Powder Birthday Donuts

 

 

It's "Tasty Tuesday", where every week we bring you new, fresh, local, healthy recipes and food tips. Find out what is in season, and what will keep you fuelled during and after your work outs!

 

Last year on my birthday I made this fun smoothie as a treat, but mostly because I wanted to put sprinkles on something.

This year (my b-day is tomorrow!) I played around with protein powder in donuts, reducing the sugar, and using whole grain pastry flour - and baking instead of deep frying them. I present you the results and my once a year sprinkle-topped treat!

 

PS. You'll need a donut pan to bake these. I got mine at Bed Bath & Beyond 

 

Make Your Meal Even Healthier Tip:

 

The only non-vegan item in this recipe is the eggs (make sure your sugar is also vegan) - I didn't try it with flax eggs, but it should work, though the consistency might change! You should be able to find gluten-free pastry flour too if you're GF! Let me know if these work for you!

Happy (almost) Halloween!

It's squash and gourd season and this week we're also going to put your homemade soup stock to good use in a delicious Roasted Butternut Squash Soup - a recipe we love from Nourished.ca.


As Alyssa points out on her blog, gourds have tons of antioxidants, beta carotene, and are high in fibre and potassium. Not to mention tasty.

 

Make Your Meal Even Healthier Tip:

 

Since this recipe is dairy AND gluten free, and is vegan to boot, there's not much more you can do to make this soup any better. Except maybe do yourself a favour and make a double batch, and freeze some for one of the grey winter days we know are coming.

Tasty Tuesday: Recipe - Cold Lemongrass Noodle Salad

I accidentally got pad thai noodles when I was trying to buy rice noodles, so I decided to make something with them, and oh boy, was it a tasty success!

I'm a wuss when it comes to spice, so you'll have to adjust if you want more or less heat in this, but there are so many flavours in this Thai-inspired dish, you might not even want it!

 

Make Your Meal Even Healthier Tip:

 

This is vegan and is filled with great veggies, but feel free to add more - Or maybe something sweet? Play around with it, and make sure you have leftovers as this dish was even better after sitting overnight!

It looks like the weather is going to be slightly less dreary but I made these banana muffins one cold ,rainy afternoon and they're still delicious. Make them on a Sunday for brunch and if you make them in mini-form you can take them on the go on the way to Barre!

There isn't much more you can do to these as they are sugar free, made with oats and whole wheat flour, and are dairy-free as well! Maybe just eat them in moderation/share with friends, neighbours or your Barre BFF!

Tasty Tuesday: Recipe - Sweet Potato Smoothie

Did you make too many sweet potatoes for Thanksgiving and now you don't know what to do with the leftovers? Well, if you haven't put seasoning on them yet, follow this recipe and you get a spicy fall smoothie you can take on the go, or make into a smoothie bowl with some granola and dried fruit!

 

Make Your Meal Even Healthier Tip:

 

I hid some protein powder in here for an extra boost on my way to Barre, and you could probably add in some chia seeds, and hemp hearts.

This smoothie is pretty dense and filling, so make some for a smoothie one day, and then add it to granola and fruits the next day. Saves time and is super tasty.

Tasty Tuesday: Recipe - Cranberry Apple Sauce

Thanksgiving is almost upon us, and whether you're making a whole meal yourself or bringing a side to a dinner elsewhere, we've got you covered. Cranberries are coming into season, and while not everyone loves them as a side dish next to the turkey (or tofurkey), they'll LOVE it in this applesauce recipe.

You can get everything you need at the farmers market this weekend, especially if you want to go organic like I did... and it takes little to no effort to make. Not to mention, your house will smell AMAZING.

 

Make it Even Healthier Tip: 

This recipe is about as raw, simple, vegan, and healthy as it gets, especially as it has no added sugar! If you make enough of it, you can preserve some of the apple sauce for later dates. Info on preserving is easy to find on the internet, and there are lots of classes out there in the community that you can take to learn hands on (I took one at Save-On Meats). Enjoy!

Tasty Tuesday: Recipe - Miso Ramen

Soup season is upon us. I just want to hunker down with a bowl of noodles all the time now, and with this (vegan) miso ramen I can make a lot of the broth, and freeze it, so that when I want some, I don't have to start from scratch every time! This is way better than the instant-packaged stuff you'll find at the store, trust me.

 

Also, see if you can make this without humming the Chixdiggit song "Miso Ramen".

 

Make Your Meal Even Healthier Tip:


Throw as many kinds of greens as you'd like in here! Don't have baby bok choy? Try kale or spinach! Have some cabbage on hand? Toss that in too! Even if you don't have tofu handy, you can load up on the mushrooms and other veg.

Tasty Thursday: Recipe - Beets, Tomato, Mozzarella Salad

End of the heirloom tomatoes and fresh beets (esp the colourful ones) season, but you can still find them at farmers markets and some specialty stores.

This is a great cold salad, that you can serve along side a meal, at a dinner party, next to a pizza, or just have for lunch!

 

Make Your Meal Even Healthier Tip:

Make sure to find nice, FRESH, mozzarella - it's usually in the deli section at the grocery store. Or seek out some vegan cheese - specifically some nut cheese, maybe a nice goat cheese crumble. Do what suits you best, but this recipe is chock full of goodness.
Oh! And if/when you can find golden beets, you can switch the whole thing up and use red tomatoes or heirlooms.

Tasty Tuesday: Recipe - Cranberry & Apple Smoothie

It's the beginning of cranberry season!
I tend to stow them away in the freezer for dishes that require them and for smoothie making purposes, either with other berries, or straight up like this one. The sweeter the apple the less tart the smoothie, but I love tart things. You can also play with adding a bit more maple syrup, or a splash of lemon juice. It all depends how you like it. That's what taste tests are for!

You could probably hide some more goodness in this easily. Protein powder, hemp seeds... I want to add blue majik next time and see what colour it produces!
